Update on today's Sawyer setup.
We were not able to get our invoice to pay for our zoning to setup. We had approval through the office of course, but there was some confusion for a seasonal rate so we can see yall more. No rate, no invoice, no permit, so we can't just come out or we'll get a big fine on top of that. So! Next week we should be squared away and ready to serve y'all again before our trip to the St. Joseph County 4H Fair

Some modifications starting on the smoker doors to help lift them, and take some strain off the shoulders. 😬 Winches for the win. I didn't really want counterweights and like the cleaner look without one. So a hidden winch roof mounted I believe will do the trick! Should give a me 2 second open close time, if I'm happy with it, both door switches and rotisserie switch will go on a dedicated center panel.

Our Smoked Lobster Rolls.
Always prepped fresh for the day. No pre-cooked lobster around here. Lightly seasoned, smoked in our rotisserie, then finished in a fresh herb and butter blend. We let the lobster and butter do the work, no mayo blends covering that good stuff up. Served on a Brioche split top, garnished with chives and Maldon salt, with a side of our zesty Surf Slaw and a lemon. Surely a meal you'll remember!
