Man Fu Yuan's Man Fu Yuan Frasers House, a Luxury Collection Hotel, Singapore refreshed à la carte menu showcases Chef Aaron Tan's Aaron Tan latest creations, blending traditional Cantonese techniques with refined craftsmanship.
Some of the standout dishes I tried include the Superior Shredded Silken Tofu Soup with Spinach and South African Fish Maw, featuring hand-shredded tofu in a rich superior broth; the impressive Eight Treasures Hulu Gourd Duck, meticulously deboned and shaped into a traditional gourd symbolising prosperity; and the 168-Hour Cured Fresh Mantis Prawns with Fragrant Wine, where the prawns are cured over seven days for remarkable depth of flavour. Another dish worth ordering is the Braised Prawn Mousseline Stuffed Morel Mushroom, showcasing delicate handcraftsmanship with juicy prawn mousse stuffed into earthy morels and finished in superior master stock.
Other highlights from the menu include the Stuffed Prawn Paste Chicken Wing, Slow-cooked Rock Lobster with Truffle and Duo Garlic, and the Wok-seared A5 Wagyu Beef with Mongolia Sauce and Steamed Wuchang Rice.
To end on a sweet note, don't miss the refreshing Chilled Mango Purée with Peach Collagen and Pomelo, along with the delicate Bird's Nest Egg Tart.
