I was actually trying to make oat bars… but they turned into the nicest homemade granola instead! Perfect over yogurt, with milk, on porridge or just eaten by the handful.

Ingredients

80g salted butter
50g peanut butter
60g honey
220g oats
60g raisins
30g flaked almonds
30g ground almonds
½ tsp sea salt

Method

Preheat your oven to 160°C fan and line a baking tray or roasting tin with baking paper.

Melt the butter, peanut butter and honey together until smooth.

Add the oats, raisins, flaked almonds, ground almonds and sea salt, then mix until everything is evenly coated.

Spread the mixture into the prepared tray and press it down firmly with the back of a spoon.

Bake for 20–25 minutes. Halfway through, give it a quick mix, then press it down firmly again before returning it to the oven.

Once baked, leave it to cool completely in the tray without touching it. As it cools, it’ll crisp up and form delicious crunchy clusters.

Break it into pieces and store in an airtight container for up to 2 weeks.

Teenager approved ✅ These Bang Bang Chicken Bites disappeared in record time.

Bang Bang Chicken Bites
500g chicken breast, cut into bite-sized pieces
75g (½ cup) cornflour
Oil spray or oil for brushing
For the marinade:
150g (⅔ cup) natural yogurt
1 egg, beaten
½ tsp garlic powder
¼ tsp salt
¼ tsp white pepper
For the sauce:
100g (just under ½ cup) mayonnaise
60ml (¼ cup) sweet chilli sauce
2 tbsp Sriracha
Juice of ½ lime
To garnish:
Spring onions, chopped

Method
-Place the marinade ingredients in a large bowl. Add the chicken and coat well. Leave for 15 minutes if you have time.
-Mix together all the sauce ingredients and set aside.
-Place the cornflour in a bowl. Drain the chicken from the marinade and toss in the cornflour until well coated.
-Spray or brush the air fryer basket with oil and preheat to 200°C for 3 minutes.
-Add the chicken in a single layer, then spray or brush the chicken with oil, making sure the cornflour coating is covered.
-Cook for 12–15 minutes, shaking every 5 minutes, until golden, crispy and cooked through.
-Toss the cooked chicken through the sauce, garnish with spring onions and serve.

Soy Garlic Chicken

Chicken marinade
1 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp white wine
1 tbsp cornflour

Sauce
2 tbsp light soy sauce
2 tbsp dark soy sauce
2 tbsp oyster sauce
2 tsp honey

This is why we don’t order takeaways! Sweet and spicy Crispy chicken recipe below if you’d like to try it

Serves 2 with seconds
600g chicken breast diced

Marinate in
A splash of Sriracha
1 tsp Sesame oil
a glug of light soy sauce
1 egg

Mix together and marinate until you have the rest of ingredients prepped then coat in cornflour and airfryer for 15 mins making sure it’s coated with oil and shaking every 5 mins

For the sauce
1/4 cup Honey
1/4 cup Sriracha
1/4 cup ketchup
1 tbsp apple cider vinegar
A glug of light soy sauce
A glug of sesame oil

When chicken is on the last 3 mins fry your veg on some sesame oil (onion, garlic, carrots and peppers)

Add the sauce, let thicken for a minute, when chicken is crispy add to the pan and mix in

Serve with rice or noodles
