Perfectly cooked skirt steak with that bright chimichurri is one of those combinations that never gets old. The challenge with photographing meat is capturing the texture - those individual muscle fibers, the caramelized crust from proper searing, the gradient from charred exterior to that perfect medium-rare center. Lighting becomes critical here. You need angles that emphasize the surface texture without making it look dry, highlighting the moisture and juiciness while showing off that char.
