7 years ago this month, I launched my blog (mostly matcha). The inaugural post was my beloved Matcha Mochi Cake recipe! 💚

Here’s a look back on the different hero photos:

1. October 2023: I rested and took brand new photos of both the loaf and the mini Bundt cake version. It was a huge overhaul on this recipe, and I hope it’s more user-friendly than before.
2. July 2017: The original hero photo, with current edits. I still like this one.
3. Then and now photo collage (top: 2017; bottom: 2023).

Two years ago, I launched Mostly Matcha, a blog of matcha recipes because I honestly love sifting matcha. The first recipe I shared is my beloved Matcha Mochi Cake.

I've not had time to make new posts, but I'm making improvements to the blog and updated this recipe in collaboration with .

A few years ago, I found the Matcha Mochi Cake recipe and it became my favorite thing to bake.

Matcha Cold Brew

Ingredients:

• 2 teaspoons of matcha powder (I like to use Matsu™ from Matchæologist)
• 8 ounces filtered water
• 6-7 ice cubes (add more ice if you would like)
• A 10 ounce mason jar

Directions:
1. Sift matcha into mason jar
2. Add water and ice cubes
3. Place the lid on mason jar tightly
4. Shake well (for 30 to 60 seconds)

This recipe is inspired by my first matcha cold brew experience 4 years ago at Front Coffee + Café. Enjoy!
