There’s a man here who takes care of all the coconut palms at the various properties and makes sure that they are harvested before they may become dangerous or as needed. It is fascinating to watch him with his climbing ropes and a machete tucked down the back of his shirt, expertly climbing the tree and going to work trimming dead branches and harvesting the cocos. He is probably in his 50’s and strong. And he is completely blind. Once he finishes, he sharpens his machete and goes on his way leaving the cocos for the owner, and they are processed. The delicious and super nutritious water is extracted first and then they are left to dry when the pulp can be grated for use. Green coconut flesh is also a treat and the Coco Man who sells them on the beach will come back to filet them for you later after you have enjoyed the fresh cold coco water, cutting them into nice bite sized slivers and adding some lime and chile en polvo (chili powder). All of this is delightful. 🤩
