I’ve seen some great places in this world, some with tremendous historical and cultural implications. Travel is a blessing, and I honor it.

But I’m not sure I would trade those places for the people I’ve met on the world’s road who cook with smoke and fire. It takes a certain soul to want to cook the hard way, the careful way, the creative way, the primordial way. And I connect with those souls. Whether they are in Ireland, Greece, Washington DC, South Texas, or South Dallas, these are just good people.

Thanks for helping to make Ireland a great place, Joe Savage. And to the next Joe Savage….

You would think a name like “Joe Savage” belonged to someone in a punk band, or maybe a professional wrestler—an entertainer of some sort.

Joe Savage is definitely an entertainer, but he entertains Dubliners with wood-smoked foods that compete with anything outside of his native Ireland.

Joe grew up in the Dublin suburb of Swords (Joe Savage of Swords…could have easily been a pirate’s name, too) as one of 9 children. Joe’s father owned an independent grocery store that competed with big box retailers by sourcing directly with farmers and other food producers, which is where Joe learned the importance of quality procurement.

Joe got his cooking start at home, learning from his mother, who cooked everything from scratch. As a young adult he then ran the kitchen of a family-owned pub where he developed cooking his fundamentals, and although he already started experimenting with live-fire cooking, none could be done at the thatch-roofed pub. He committed to pushing his skills by enrolling at the renowned Ballymaloe Cookery School, and afterwards deepened his experience with smoke at Smokin Soul in Wexford.

Finally Joe opened Joe’s Smokehouse after purchasing a farmhouse right outside Dublin where he cooks, smokes, and fires everything from scratch (only minus the sausages he gets from a local butcher versed in Texas-style sausage-making). His smoker and live-fire rig was developed and built locally. Virtually all food is purchased from local farms, much of which is delivered to the farmhouse by the farmers on their tractors.

Now Joe Savage now makes a name for himself as one of Ireland’s foremost pitmasters.

“Pitmaster” fails to lock in an exact definition, and maybe that’s the best thing about that word. It can apply to multiple techniques, multiple traditions, and a multitude of people. And on the other side of the world from where that word originates is Kate Chatzikyriakou, of Fine Mess Smokehouse, where she continues to push the boundaries of that definition.

Fine Mess Smokehouse sits in the ancient city of Athens, Greece, but much of its inspiration hails from the New World after owner and pitmaster, Kostias Bastias, traveled across the US over 6 weeks in search of culinary inspiration. He instantly fell in love with barbecue. After opening Aaron Franklin’s book on cooking, Kostias and a colleague chef opened Fine Mess in 2019.

Fine Mess does not try to be Texas barbecue. It also shies away from being a Greek version of American barbecue. Rather, it employs real wood, offset smoking to honor the crossroads of creativity and tradition. This inspires Chatzikyriakou to smoke just about anything Fine Mess chooses to serve; yes, brisket, ribs, and pork belly, but also tomatoes, strawberries, rabbit, and local vegetables. To her and to Fine Mess, smoke is an ingredient, unbound by any tradition.

If you ever find yourself anywhere near that aide of the world, go see and taste where these Greek pitmasters are pushing the art of smoke.

A rap duo, or a cooking duo? The answer May surprise you….

and are two long-time friends who started cooking together as a hobby. People started encouraging them to offer bbq to the public, so they resurrected a family heirloom offset smoker and started catering. After a few false starts, the pair opened out of brewery in Grapevine, Texas.
