DIY Sushi bowl🍣

We loved making these growing up! And I have started making them again recently 🤍 you can add whatever veggies or protein you like, super easy and versatile 🙌🏼

My favorites :

cooked brown rice
Snap peas
Bell pepper
Carrot
Cucumber
Avocado
Green onion
Edamame
Imitation crab or salmon

Toppings:
Nori Komi Furikake (seaweed seasoning)
Wasabi
Sushi Ginger
Spicy Mayo
Soy sauce or coconut aminos

Egg Nog Rice Pudding - Dairy Free🤍
one last Christmas recipe before the new year, to finish off all our egg nog!

1 cup uncooked rice
3 cups DF eggnog (I used silk almond)
3/4 cup oat or coconut milk
1/4 cup coconut sugar
1/4 T salt
1-2 T vanilla
1 T pure maple syrup

Add everything to the pot on low and Simmer for 30 min, until rice is cooked, stirring pretty frequently so bottom doesn’t burn.
Top with nutmeg, cinnamon, berries or raisins, or pomegranate 😍

Extra veggie chicken noodle soup 🍲

8 cups chicken bone broth
1 8-10 oz package or GF egg noodles or frozen grandma egg noodles
2 T olive oil
3 cloves garlic
1 small onion
2-3 carrots
3 stalks of celery
2-3 cups shredded rotisserie chicken
1-2 cups chopped mushrooms
1-2 cups chopped asparagus
1-2 cups chopped broccoli
1-2 cups chopped cauliflower
1 zucchini chopped
Season salt
2 T nutritional yeast
Italian seasoning
Rosemary
Salt & pepper

Lemon + parsley toppings

Cook onion + carrots + celery in the olive oil and garlic until starting to soften.
Then add the bone broth + noodles + veggies + seasonings + chicken until
Noodles are fully cooked.
Serve hot with fresh parsley + lemon on top!

I have been grateful for my body lately, which is different after being so disappointed in it for long... Why can’t it get pregnant? Why do my arms give out when I am holding my baby? Why don’t I feel strong anymore? Why can’t I eat what makes me happy? Why is it always causing me so much pain? On and on…

But just in the last 2 months I have had

bad endo flare ups
Nausea
Insomnia
Bladder spasms
Fatigue everywhere
Extreme bloating
Constant back and neck pain
Numb arms
Panic attacks
Depression
Extreme diarrhea to
Extreme constipation
Kidney stones
A Bad cold
New endometriomas growing
And more…

I have taken so many meds (which I don’t normally do)

Advil
Ibuprofen
Zofran
Morphine
Lexapro
Hydrocodone
Flowmax
Teradol
Miralax
Smooth move tea
Constipation suppositories
Rectiade
DayQuil
NyQuil
Sambucol
And more…

And guess what. I am still standing.
I have been working out 2-3 times a week, chasing my toddler, shooting and editing 60+ shoots, many holiday parties, multiple trips, cooking cleaning, appointments, taking care of myself when I can.
I am grateful my body got me through alllllll of that the last two months. And all it’s gotten me through the last 6 years.
Grateful + tired.

I literally feel like a weight has been lifted🤍

The weight of the last year, month, week…the mental and physical load has been too much. I have been wanting to chop my hair for a long time and kept putting it off. I almost canceled this appointment multiple times because I felt like this was too much of a splurge right now, but Kyle said no, you need + deserve this. (Kyles texts after I sent him the pics) 😢🤍

So grateful I went today, happy for this simple change. I also was super attached to my long hair and was worried I wouldn’t pull off this short hair. But a change was needed🙏🏼

We all deserve a little self care sometimes 🤍🤍

Quick Gluten + Dairy free recipe I thought I would share!! Garlic bread has always been my guilty pleasure, definitely would choose it over almost any treat 😆

Schar Ciabatta
Avocado oil spray
Nutritional yeast
Garlic salt
Lemon Pepper
Parsley

I just slice, spray, and sprinkle everything on top of the bread and then, Broil for just a couple min!

The Schar ciabatta is my favorite I would use it for caprese, grilled cheese, or hamburger bun too! I have found it at sprouts, Walmart, and thrive app!
Fresh Parsley + garlic are always good but if you only have dried that works too!

it’s been a minute since I talked about what going on mentally + physically over here.

I am still dealing with symptoms and pain everyday. But with the level of business we have had the last couple months I have had to push it all aside.

I had had extremely bad bowel + digestive symptoms start.
Depression + anxiety attacks.
The fatigue is so bad it’s hard to work or hold Lyla.
Sleep has been hard because I need to work into the morning hours and my pain makes it difficult to fall asleep.
I have needed to see the chiropractor at least weekly for my back and neck and hip pain.
I am still not able to eat much meat and living mainly off of protein powder and soup and sourdough toast.
I am falling behind in my friendships and relationships with loved ones.

What I am doing to take care of myself-

I have started EMDR at therapy for past trauma + health trauma right now.
The feeling of brokenness and failure is constant. I just can’t keep up like I feel like I should.
I started my antidepressants the past couple weeks, haven’t noticed too much of a difference yet.
I am working out, mostly low impact 2-4 times a week.
I have started writing and journalling again.
Letting myself lay down when I need it and take baths before I work.
Just let myself cuddle and watch movies with Lyla.
Trying to keep up on my supplements + h**p seeds + green drinks.
I have a consult with a pelvic floor physical therapist
Always do my breathing exercises + affirmations “I am whole” + “I am enough just as I am in this moment”
Finally finished my packet for the Center For Endo and hoping to send that off soon.

I feel so tired in every way and always trying to do better for myself + everyone around me. If you are living with chronic illness + pain I see you. 🤍
