⚜️OVEN FRIED CRISPY EGGPLANT⚜️

If you would rather cook your eggplant for the parmesan you can cook it in the oven instead of a skillet

INGREDIENTS
1/2 cup mayonnaise
1 unpeeled eggplant, sliced about 1/2 in
1/2 cup keto panko
1/2 cup grated parmesan cheese
1/2 tsp dried Italian seasoning
2 tbsps avocado oil
1 tbsp Cajun180 Dream seasoning

I set my temperature an oven at 425 on the convection bake mode

Mix the Panko and Parmesan with the seasonings

Cover each slice of eggplant with light cover of mayo, then dredge to the dry mix, on a baking pan place in the place eggplant, throw in the oven for 10 to 12 minutes, flip and then go another 10 minutes until a nice golden brown color, enjoy⚜️
