No paper filter with a pourover? I’ve been brewing at home with the Cicada dripper that is both pourover dripper and filter in one, no paper filter!

This is definitely a different style of brewing. Because the ceramic does the filtration, the resulting body is very light and tea-like (think Chemex), but because the dripper is the filter, the extraction can be much more even. The high degree of filtration also means typically slower brews, as with any thick filter. The result is light bodied brews that can be simultaneously very bold in flavor.

It took some time to adjust my brewing method (and trying to think back to best practices using thick filters). I have been using coarse grind settings, higher brew temps (~97 C) and very minimal agitation.
