Dorothea Erichsen Photography Photography has become my visual language — a way of seeing the world that is uniquely my own and a means of sharing that vision with others.

Through my lens, I seek to arrest the fleeting moment, to create space where the quiet magic of everyday life s I am Doro (short for Dorothea, but was always called Doro, except by my father). I am a Nutritional Therapy consultant, but first and foremost a foodie. I love food, I love to prepare food, but most of all I love to eat and share with others. Here it comes though I am a food snob, I like

to eat good and healthy food. I was born and raised in Germany as the youngest of seven, and grew up pretty close to nature, my siblings and I all turned into good cooks and foodies. I live now in the US with my husband and two sons. When my kids were little cooking every day became a challenge. I started buying cookbooks and experimented. Cooking became my time to relax and create. Then I became sick, mold exposure, chronic Lyme, and more. And my research led me, to food as medicine. I changed my diet and gained energy, read a ton of books and that lead me to the Nutritional Therapy Program, which I enrolled in and became certified. I am passionate about what food can do for us, and how little changes, can bring big results. It is all about nourishing oneself and your loved ones. I hope this page will inspire you to cook, experiment and learn and spread the joy of food!! Nourish yourself and heal.

Don’t ask why I had take this picture. I guess a stroke of inspiration.
It is summer and I will be logging out of this page for the summer. Will do some traveling and soul searching to see what’s next and how I can provide some support on here or not. It will be a blank page. Go have some fun, make some amazing memories and I will check back in here in September.

Persimmon is part of the tomato family. Shocker I now. Tomatoes are a fruit FYI. Persimmons are the national fruit of Japan. What I read that American Indians have used persimmons as well. Which means they grow here in the US. That would be more towards California. NY is too cold. They are a good source of potassium, phosphorous, and vitamin C. My favorite kind are Fuyu persimmons. They are harder and therefore less sweet. I will share a nice salad in the next post. Happy Tuesday. ✨

Let’s talk food. What is food to you? For me it is many things. As you can see in this pic. Food is damn beautiful. It is magic, take the time to find it. Most of all it is nourishment. We eat to nourish our bodies. We eat to inspire our tastebuds. We eat for energy. We eat for connection. We eat for soothing. We eat for pleasure. We eat to make ourselves wrong. We eat out of boredom. We eat to forget. We eat just because we can. We eat because we are hungry. And more. What I teach is awareness why we eat at a certain moment. Pay attention. Oxtail is such a simple way to make an effing amazing soup. It really doesn’t need much. I usually wind it. This one I just added water onion, carrots, sweet potato, salt. Some coconut aminos, fish sauce. And voila. I cooked it in my so simple. Cooking is simple. The importance are the ingredients, which should always be food from this earth.

Let’s talk breakfast. I used to not eat breakfast until I learned I have an issue with my blood-sugar due to chronic Lyme. I would wait until 10-11 am to eat. Which ended up making me more prone to Blood-sugar crashes. And I started eating savory foods in the morning. I am lucky to do really well with eggs and I usually have some leftover veggies from the night before. So it’s simple for me. There is no one size fits all when it come to eating well. So it is a learning process and requires paying attention to oneself. What have you learned from listening to your body and fueling it at the times, which work for you?
