Chicken Paprikash over Egg Noodles
Ingredients:
3 to 4 pounds chicken thighs and drumsticks, or whole chicken legs
Kosher salt and freshly ground black pepper to taste
1 tablespoon neutral oil, like canola
3 tablespoons unsalted butter
1 large yellow or Spanish onion, peeled and diced
3 cloves garlic, peeled and minced
3 tablespoons Hungarian paprika, sweet or hot, or a combination
3 tablespoons all-purpose flour
1 cup canned crushed tomatoes or 1 large ripe tomato, chopped
1 cup chicken broth, homemade or, if not, low-sodium
1 pound egg noodles
¾ cup sour cream

I took this photo at the base of The Spanish Steps in Rome.(1994) I noticed her weaving in and out of the crowd and I reached in my bag for my 180mm 2.8 lens. As I raised my camera(Nikon FM2N), I focused but she was moving so fast. Even if I had a well composed shot her face and head were completely covered and the sun was shining bright directly overhead. I couldn’t see her face and even if I could it would be in complete shadow. I hung in there to the point of my forearms burning. I wanted to give up but somehow stayed. She noticed me and I was sure I had no chance of an interesting shot but still stayed composed while trying to focus. Then she looked up again and I hit the shutter. I was happy the timing worked out but even if she looked at me there was no way there was light on her face. When I got my film back months later(I spent 5 months traveling) I had this shot and the basket she was holding is reflecting light back into her face. I wanted to give up but didn’t and was rewarded for it in the end. 30 years later I digitized the negative(Kodak Plus-X Pan) and used sharpening software and am happy with the result.

Turkey and Spinach Curry
2 tablespoons lard or other oil, could be leftover from roasting your poultry!
1 small onion, chopped
2 cloves garlic, minced
1 tablespoon minced fresh ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 to 1/2 teaspoon turmeric
1/8 teaspoon cayenne, or to taste
1 cup tomatoes, chopped (canned or frozen are fine; include their juice)
1 cup coconut milk
Salt and freshly ground pepper
1/2 pound (or more) fresh spinach, washed and roughly chopped
2 cups leftover turkey, white or dark meat or a combination, roughly chopped
Heat oil in a medium saucepan over medium-high heat; add onion, garlic and ginger and cook until they begin to soften, about 2 to 3 minutes. Add cumin, coriander, turmeric and cayenne and cook, stirring, until spices are fragrant, about another minute.
Add tomatoes and their juices and coconut milk and sprinkle with salt and pepper; bring mixture to a boil and reduce heat to medium. Simmer for another 8 to 10 minutes, or until tomatoes break down.
Add spinach and turkey to pan and continue to cook until spinach wilts and turkey is warmed through, another 3 to 5 minutes. Adjust seasoning, garnish with cilantro and serve.

Watching these guys grow up and become the men they ate was pretty awesome.
