Mint Chocolate Chip Fudge Recipe

Ingredients:

2 cups white chocolate chips

1 cup sweetened condensed milk

½–1 tsp peppermint extract (or 1½ tsp mint extract)

½ tsp vanilla extract

2–3 drops green gel-based food coloring

½ cup mini semi-sweet chocolate chips, divided (reserve some for topping)

Instructions:

Prep Pan
Line a loaf pan with parchment paper and set aside.

Freeze Chips
Place mini chocolate chips in the freezer while you prepare the rest.

Melt Chocolate Mix
In a microwave-safe bowl, combine white chocolate chips and condensed milk. Microwave in 30-second intervals, stirring between each, for about 1½ minutes total, until smooth.

Add Flavor & Color
Stir in peppermint (or mint) extract, vanilla, and food coloring until evenly blended.

Cool to Room Temp
Let fudge mixture cool for about 20 minutes, stirring every 5 minutes. It should be completely cool to avoid melting the chocolate chips later.

Fold in Chips
Gently fold in most of the frozen mini chocolate chips, saving a few for the topping. Mix just enough to distribute chips evenly.

Set the Fudge
Immediately pour mixture into the lined pan. Sprinkle reserved chips on top.

Chill
Refrigerate for at least 2 hours until firm.

Slice and Serve
Lift fudge out using parchment paper. Cut into pieces using a sharp knife dipped in warm water for clean slices.

Storage:

Fridge: Store up to 2 weeks in an airtight container

Freezer: Freeze up to 3 months in a sealed container

my grandmother would warm the kitchen with the sweet scent of cinnamon and sugar, her hands expertly folding delicate pastry dough into perfect little hearts. We’d sit at the table, waiting for the golden palmiers to come out of the oven, crispy and glistening. It was the simplest treat, yet it felt like pure magic — one bite and you knew you were home.

Easy Palmiers (Elephant Ears)
A buttery, flaky pastry coated with caramelized cinnamon sugar — these palmiers are a quick and elegant treat!
Yield: ~24 cookies
Prep Time: 15 minutes
Cook Time: 10–15 minutes
Total Time: 30 minutes

Ingredients

1 sheet puff pastry, thawed

½ cup granulated sugar

2 teaspoons ground cinnamon

Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Mix sugar & cinnamon in a small bowl.

Sprinkle half the cinnamon sugar mixture on your clean work surface.

Lay puff pastry over the sugar and sprinkle the remaining cinnamon sugar evenly on top.

Roll both sides of the pastry inward, meeting in the center (like a scroll).

Gently press the log to seal slightly, then chill in the fridge for 10–15 minutes.

Slice into ½-inch thick cookies and place on prepared baking sheet, spacing them out.

Bake for 10–15 minutes, flipping halfway through, until golden brown and caramelized.

Cool on a wire rack before serving.

Tips & Variations

For extra caramel crunch, sprinkle with a bit more sugar before baking.

Drizzle with melted chocolate or maple glaze for a fancier finish.

Swap cinnamon for pumpkin pie spice or even cardamom for a twist.

my grandma would bake a coffee cake and let it cool on the kitchen window while the smell of cinnamon and blueberries drifted through the house. We’d sneak bites before the guests even arrived. Now this blueberry coffee cake brings back that cozy tradition, one sweet slice at a time.

Blueberry Coffee Cake

Ingredients:

Cake Batter:

2 cups all-purpose flour

2 tsp baking powder

½ tsp salt

½ cup unsalted butter, softened

¾ cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup milk

2 cups fresh or frozen blueberries (if frozen, do not thaw)

Crumb Topping:

½ cup all-purpose flour

½ cup granulated sugar

½ tsp cinnamon

¼ cup unsalted butter, cold and cubed

Instructions:

Preheat oven to 375°F. Grease a 9x9-inch baking dish or line with parchment paper.

Make the Crumb Topping:

In a bowl, mix flour, sugar, and cinnamon.

Cut in butter with a fork or pastry cutter until crumbly. Set aside.

Make the Cake Batter:

In a medium bowl, whisk together flour, baking powder, and salt.

In a large bowl, cream butter and sugar until light and fluffy.

Beat in eggs, one at a time, then stir in vanilla.

Add dry ingredients alternately with milk, mixing just until combined.

Gently fold in blueberries.

Assemble the Cake:

Pour batter into prepared baking dish and spread evenly.

Sprinkle crumb topping evenly over the top.

Bake:

Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.

Let cool before slicing and serving.

Tips & Variations:

Use buttermilk for extra moistness.

Add lemon zest to the batter for a bright flavor.

If using frozen berries, toss them with a little flour before folding in to prevent sinking.

Storage:

Store at room temperature for up to 2 days, or refrigerate for up to 5.

Can be frozen (wrapped tightly) for up to 2 months.
