🥭🍦No ice cream on the supermarket shelf?? Try this MANGOnificent ice cream. You’re going to want to SAVE this recipe!

Fresh Mango Ice Cream

INGREDIENTS:
2 Large Kesar Mangos - to make 280ml mango purée and the remainder to be chopped in chunks for later.
240g Sweetened Condensed Milk
250ml Fresh Whipping Cream or Double Cream
Icing Sugar to taste (optional)

METHOD:
1. Dice mangos and place into a fine sieve to drain the excess juice. Save this for later.
2. Chop some thicker mango chunks and set a side for later.
3. Once drained in the sieve, blend the mangos into a purée.
4. To this add in the condensed milk and combine. Have a taste and add in powder sugar if needed.
5. In a large bowl pour in the whipping/double cream and using an electric or hand whisk start to whisk. On a hot day, place the bowl and whisk in the freezer before doing this.
6. Once the cream is whipped, gradually add in the mango mixture, mix in slowly making sure the cream doesn’t lose its air.
7. Retain a small amount of purée to decorate on top later.
8. Use a whisk to smooth out the mixture and pour into a loaf tin or a container of your choice.
9. Add in the chopped mangos and gently mix in with a skewer. Add the remaining mango mixture on top & create swirls.
10. Cover in cling film, making sure it touches the surface & edges so no ice crystals form on top.
11. Freeze for a minimum of 4 hours or overnight & enjoy 🤤🍦❤️

THEPLA AND MANGOS

As India’s Mango Season comes to a wrap! I’m trying to eat as much as possible 😋

Viennese Whirls 👩🏽‍🍳

INGREDIENTS

100g softened unsalted butter
25g icing sugar
1 tsp vanilla extract
100g plain flour
1 tsp cornflour
¼ tsp baking powder
Optional: Milk or dark chocolate

METHOD

1. Preheat the oven to 170°C/gas mark 3.

2. In a bowl beat the butter and sugar until pale and light.

3. Add the vanilla extract and mix again.

4. Sift the flour, cornflour and baking powder into the bowl and mix until smooth and thoroughly combined. Don’t over mix.

5. Spoon the dough into a piping bag fitted with a medium star nozzle and pipe swirls.

6. Bake on the middle shelf of the preheated oven for 10-15 minutes until they are a pale golden colour.

7. Remove from the oven and cool on the baking tray for 5 minutes.

8. Transfer the cookies to a wire rack until completely cold.

9. OPTIONAL: Add chopped milk chocolate into a bowl and melt over a pan of barely simmering water.

10. Remove from the heat and stir until smooth.

11. Dip one end of the biscuit into the chocolate and leave to set on baking parchment. Repeat for all of the biscuits, and sprinkle a little chopped pistachios on top of the chocolate.

PASSION FRUIT POSSET

Grab your ingredients and try this one out! You will not be disappointed! 😋

RECIPE

Ingredients:
300ml double cream
75g caster sugar
4 passion fruits + 3 for garnishing

Method:

1. Strain the pulp of 4 passion fruits so you are left with the juice.

2. Add double cream and sugar in a saucepan and bring to a boil over a low heat.

3. Once it comes to a boil take if off the heat and add the passion juice and whisk quickly for a minute.

4. Leave to cool slightly then transfer into glasses (in my case GU glass pots) and chill in the fridge for three hours.

5. When serving, add the pulp of half a passion fruit on top.

Spring is Here! Time for Something Zesty 😋

LEMON POSSET

INGREDIENTS
For Posset:
600ml double cream
150g caster sugar
2 large lemons, zest and juice only
Digestive Biscuits

For Raspberry Coulis:
150g Raspberries
1 tbsp sugar (adjust based on sweetness of Raspberries)

METHOD

1. Add double cream and sugar in a saucepan and bring to a boil over a low heat.

2. Once it comes to a boil take if off the heat and add the juice and zest of two lemons and whisk quickly for a minute.

3. Leave to cool slightly then transfer into glasses (in my case GU glass pots) and chill in the fridge for three hours.

4. To make the raspberry coulis, place the raspberries and sugar in a sauce pan over low heat. Allow them to soften then crush them to release the juices. Sieve to remove any bits.

5. Before serving, crush a digestive biscuit over the posset. Serve with a scoop of ice cream and drizzle with raspberry coulis.
