Old-Fashioned Pumpkin Pie 🥧🎃

📋 Ingredients:

For the Crust:
1 pre-made 9-inch pie crust or homemade crust (chilled)
For the Filling:
2 large eggs
1 can (15 oz) pumpkin puree (not pumpkin pie filling)
3/4 cup granulated sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 can (12 oz) evaporated milk

👩‍🍳 Directions:
1️⃣ Prepare the Crust:

Preheat your oven to 425°F (220°C).
Roll out the pie crust into a 9-inch pie plate, trimming and crimping the edges as desired.
Lightly prick the bottom of the crust with a fork to prevent bubbling. Place the crust in the refrigerator to chill while preparing the filling.
2️⃣ Make the Filling:

In a large bowl, whisk the eggs until well beaten.
Add pumpkin puree, sugar, salt, cinnamon, ginger, nutmeg, and cloves. Stir until fully combined.
Gradually mix in the evaporated milk until smooth and creamy.
3️⃣ Assemble the Pie:

Pour the pumpkin filling into the prepared crust, spreading it evenly.
Place the pie on a baking sheet to catch any spills and make handling easier.
4️⃣ Bake:

Bake the pie at 425°F (220°C) for 15 minutes.
Reduce the oven temperature to 350°F (175°C) and continue baking for 40-50 minutes, or until the filling is set and a knife inserted near the center comes out clean.
If the edges of the crust brown too quickly, cover them with aluminum foil or a pie shield.
5️⃣ Cool and Serve:

Remove the pie from the oven and cool on a wire rack for at least 2 hours. Refrigerate if not serving immediately.
Slice and serve with whipped cream or a sprinkle of cinnamon for an extra festive touch.

Puff Pastry Raspberry Cream Cheese Danishes

Ingredients:

For the Base:
• 1 sheet puff pastry (thawed if frozen)
• 1 egg (for egg wash)
• 1 tsp water (to mix with egg)

For the Cream Cheese Filling:
• 4 oz cream cheese, softened
• 2 tbsp sugar
• ½ tsp vanilla extract

For the Raspberry Swirl:
• ½ cup fresh or frozen raspberries
• 1 tbsp sugar
• 1 tsp lemon juice
• 1 tsp cornstarch

Optional Finish:
• Powdered sugar (for dusting)
• Optional glaze: ½ cup powdered sugar + 1 tbsp milk

Instructions:

1. Make the Raspberry Filling
In a small saucepan, combine raspberries, sugar, lemon juice, and cornstarch. Cook over medium heat, stirring frequently, for 5–7 minutes until thickened and jam-like. Let cool completely.
2. Make the Cream Cheese Filling
In a bowl, mix softened cream cheese, sugar, and vanilla until smooth and creamy. Set aside.
3. Prep the Pastry Base
Roll out the puff pastry sheet on a lightly floured surface into a rectangle about 10×12 inches. Smooth it slightly but don’t overwork.
4. Assemble the Roll
Spread the cream cheese mixture evenly over the puff pastry, leaving a ½-inch border at the top edge.
Dollop or lightly spread the raspberry filling over the cream cheese (don’t mix them — let them marble naturally as you roll).
Roll the pastry up tightly from the long edge into a log, like a jelly roll. Pinch the seam closed.
5. Chill & Slice
Wrap the log in parchment or plastic wrap and refrigerate for 20–30 minutes to firm up — this helps keep the swirl clean when slicing.
Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
Slice the chilled log into 8 even rounds (about 1–1.5 inch thick).
6. Bake the Danishes
Place the rounds spiral-side up on the prepared baking sheet.
Whisk together the egg and water, then brush the edges of each danish with egg wash for a golden, glossy finish.
Bake for 18–22 minutes, or until the pastry is puffed and golden brown.
7. Cool and Finish
Let cool slightly. Dust with powdered sugar or drizzle with a simple glaze if desired.

Serving & Storage
• Best served slightly warm or at room temp.
• Store leftovers in an airtight container at room temp for 1 day or refrigerate for up to 3 days. Reheat in an oven or toaster oven for best texture.

Yield: 8 danishes

Savory Cajun Chicken over Creamy Parmesan Linguine

📋 Ingredients:

2 boneless, skinless chicken breasts, cut into strips
12 oz linguine pasta
2 tablespoons olive oil
2 tablespoons Cajun seasoning
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

👩‍🍳 Directions:

Start by prepping the chicken. In a small bowl, mix together the Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Coat the chicken strips with this spice blend, making sure every piece is well-seasoned.
Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken and cook for 6-7 minutes, turning occasionally, until the chicken is golden brown and cooked through. Once done, remove the chicken from the skillet and set aside.
Meanwhile, cook the linguine in a large pot of salted boiling water according to the package instructions. Once cooked, drain the pasta, keeping a little of the pasta water aside for later if needed.
In the same skillet used for the chicken, add a bit more olive oil if necessary and sauté the minced garlic over medium heat for about 1 minute, until fragrant.
Pour in the chicken broth, scraping the flavorful bits from the skillet. Add the heavy cream and bring the mixture to a simmer. Let it cook for 2-3 minutes until the sauce thickens slightly.
Add the cooked linguine to the skillet, tossing it in the creamy sauce until it’s evenly coated. Stir in the grated Parmesan cheese and let it melt into the sauce, making it rich and velvety.
Return the cooked chicken to the skillet, mixing everything together so the flavors combine.
Garnish with fresh parsley and serve immediately for a flavorful, creamy meal.
