Ingredients:

3 medium sweet potatoes, peeled and sliced into ½-inch rounds
2 tablespoons olive oil
2 tablespoons honey
1/2 cup crumbled feta cheese
1 tablespoon fresh thyme leaves (optional)
Salt and freshly ground black pepper, to taste

Slow Cooker Creamy Ranch Beef Tortellini!
Rich broth. Cheesy pasta. The ultimate dump-and-go comfort dinner.
This slow-cooked meal is packed with savory ranch flavor and takes almost no effort to throw together for a hearty, filling weeknight dinner!
The Essentials:
1 lb ground beef
1 (20 oz) package cheese tortellini
1 (10.5 oz) can cream of mushroom soup & 1 cup beef broth
1 packet ranch seasoning mix & 1 cup shredded mozzarella cheese
The Game Plan:
Brown It: Cook the ground beef in a skillet over medium heat until fully browned, then drain the excess grease.
Dump It: Transfer the cooked beef directly into your slow cooker, adding the cream of mushroom soup, ranch seasoning, and beef broth. Stir until perfectly combined.
Simmer It: Cover it up and let it cook on Low for 3–4 hours so those rich flavors meld together.
Toss It: Stir in the cheese tortellini and let it cook for another 30–40 minutes until the pasta is flawlessly tender. (Pro tip: for extra richness, stir in a splash of heavy cream right at the end!)
Melt It: Sprinkle the shredded mozzarella heavily over the top and cover again just until the cheese is beautifully melted. Finish with some fresh parsley for a pop of color before serving.
