I’m having some right now and it’s so good — exactly why I started roasting in the first place. I wanted great coffee, not the stale, burnt stuff that’s been sitting in a warehouse for months.
I’ve tried a lot of coffee over the years, and with a pretty sensitive palate, I know when something’s right. It took trial, error, and a whole lot of roasting to dial in the flavors I was chasing… but it was worth it.
