The iconic tableside Caesar at starts with anchovies being pressed into the mixing bowl by hand — a small detail that tells you everything about the place.
Photographing this year’s steakhouse feature was a reminder that atmosphere is everything. Legacy establishments like this can fall apart the second you overlight them. The darkness, warm yellow glow, and feeling that time slowed down somewhere around 1978 — that’s the whole point. My goal was simply to preserve it honestly.
Paul, now in his 80s, still comes into the restaurant every day, and it clearly keeps him young. A true gentleman to work with: Warm, patient, proud, and genuinely appreciative to be included in this year’s feature.
Old-school steakhouses aren’t just about the food. They’re about stewardship and consistency. Mr. Paul’s still has both.
