The iconic tableside Caesar at starts with anchovies being pressed into the mixing bowl by hand — a small detail that tells you everything about the place.

Photographing this year’s steakhouse feature was a reminder that atmosphere is everything. Legacy establishments like this can fall apart the second you overlight them. The darkness, warm yellow glow, and feeling that time slowed down somewhere around 1978 — that’s the whole point. My goal was simply to preserve it honestly.

Paul, now in his 80s, still comes into the restaurant every day, and it clearly keeps him young. A true gentleman to work with: Warm, patient, proud, and genuinely appreciative to be included in this year’s feature.

Old-school steakhouses aren’t just about the food. They’re about stewardship and consistency. Mr. Paul’s still has both.

The feels near-permanent in Detroit, a true legacy business and fixture that has earned its place through consistency, atmosphere, and standards that still matter. And if only these walls could talk…

We got to spend more time than usual in the kitchen with gracious Chef RJ and see the work behind the curtain: beautiful tuna being trimmed, foie gras broken down and seared hot, wagyu meatballs, and some of the most gorgeously marbled steaks I’ve ever seen.

Then you step back into that dimly lit, vibey dining room and it feels like a time warp in the best possible way.

As writer put it, it remains “a grand old world vibe.” Exactly right. Detroit is better for places like this.

The iconic red light in a sea of blue-tile sets the tone for some serious fun to be had.
With no gas line here, steaks are slow-cooked high above the flame before being seared to perfection on the grill.
Chef , two-time honoree, has a Latin, flame-kissed spin on the conventional steakhouse that hits a certain spot others simply can’t emulate.
The man brought Argentina to Core City and Detroit hasn’t been the same since.
