Berry Almond Cottage Cheese Brunch Cake
Ingredients:
1 cup Country Fresh Cottage Cheese 4% milkfat
2 large eggs, room temperature
½ cup granulated sugar
¼ cup unsalted butter, melted and slightly cooled
1½ tsp vanilla extract
1 tsp fresh lemon juice
2 Tbsp milk
1¼ cups all-purpose flour
1¼ tsp baking powder
¼ tsp baking soda
½ tsp fine sea salt
1 cup fresh berries (blueberries, raspberries, or a mix), plus more for topping
2 Tbsp sliced almonds
Instructions:
1. Preheat oven to 350°F. Grease and line an 8-inch round cake pan with parchment.
2. In a blender, combine cottage cheese, eggs, sugar, melted butter, vanilla extract, lemon juice, and milk. Blend until completely smooth and creamy.
3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
4. Pour the blended mixture into the dry ingredients. Gently fold until just combined.
5. Toss berries lightly with 1 tsp flour, then fold into the batter.
6. Transfer batter to the prepared pan and smooth the top. Scatter a few additional berries over the surface and sprinkle with sliced almonds.
7. Bake for 32–35 minutes, or until top is lightly golden, center is set, and a toothpick inserted comes out clean or with a few moist crumbs
8. Let cool in the pan for 10–15 minutes, then transfer to a rack.
9. Once cooled slightly, dust with powdered sugar just before serving.
