I'm trying to get more veggies in my regular diet... Aaaaand for it to taste good. (I'm a CARB-avor, what can I say?) Yesterday I made stuffed peppers. They are so yummy! I'm not sure why I had never made them before. π€·ββοΈ
A few changes I made:
1) It makes a lot of "stuffing" so next time I might cut the peppers in half and bake them "open-faced" - then you get to add more cheese too. π
2) to "pre-cook" the peppers I just put them in the microwave for 3 min with a little water in the bottom of my pan. (no wrap needed)
3) I used quinoa instead of rice. I like the texture and it's more protein. And currently easy to find at the grocery store. π π
Next up is red curry lentil soup!
