My dad’s first restaurant is called “Chifa China”
It is located in Santa Cruz de la Sierra, Bolivia where he lives and works. The word “chifa” means “to eat”
in Mandarin. It also refers to a culinary style that fuses Chinese and Latin flavors. My dad’s famous dish is arguably “chicharron de pollo,” which is fried chicken wings sautéed in soy sauce with chopped onions. The defining difference between traditional Chinese food, and Chifa, is the fusion of Chinese and Latin ingredients, and flavors.
