Italy is known for its rich cheese making heritage, with each cheese reflecting the traditions of its territory. Parmigiano Reggiano is one of the most iconic expressions of this heritage, originating from the in Northern Italy and dating back to the Middle Ages. Originally developed by monks as a way to preserve milk, Parmigiano Reggiano is still produced today using only natural ingredients and traditional methods.

To build a tasting board perfect for any occasion, I started with Parmigiano Reggiano aged over 24 months, prepared four ways which highlight the deep color and crystalline notes. Crumbles, flakes, thin slices, and cubes provide different options to put together delicious bites. I chose pairings with a variety of textures and flavors like crunchy crackers, pretzels, and grissini, grapes and apple slices for some fresh sweetness, and dried apricots and cranberries for their chewy texture and subtle tartness. Walnuts add a rich and earthy flavor, while honey and apricot jam add subtle sweetness to balance out Parmigiano Reggiano’s flavor profile.
