Family Meals
Chicken Casserole Preparation:
2 small cans cream of mushroom soup, 16 oz fat free sour cream, two 12 oz cans chunk chicken, little jar sliced mushrooms, 2 packages Reduced Fat Club Crackers, 1 stick light margarine
Melt butter and mix with 2 packages of crumbled club crackers. Use mix to coat the bottom and sides of 3 quart casserole dish (approximately 8.5x13.5 inches) leaving enough to cover the top of the finished dish.
Mix soup, sour cream, and drained chicken together thoroughly. Pour into casserole dish and spread out evenly. Top with sliced mushrooms (½ to 1 cup) and cover with leftover cracker crumbles.
Bake at 425 for 30 minutes or until bubbly hot.
