🥘 Ingredients
• 3 fresh chayotes (makes 6 halves)
• Chicken, for poaching and shredding
• 1 poblano pepper
• Carrot, finely diced
• White onion, finely diced
• Green peas
• Sweet corn kernels
• A little cooking oil
• Reserved cooked chayote pulp
• 6 rectangular slices of white melting cheese
• Water, for cooking the chayotes and chicken
👩🍳 How to Make It
1️⃣ Prepare the chayotes: Peel all 3 chayotes and slice each one lengthwise into 2 equal halves, making exactly 6 pieces.
2️⃣ Cook until tender: Place the chayote halves into a saucepan of simmering water and cook until tender enough to scoop without falling apart.
3️⃣ Poach the chicken: In a separate saucepan, gently cook the chicken in water until fully cooked through, reaching 165°F internally.
4️⃣ Prepare the carrot: Cut the carrot into small, even cubes and set aside for the filling.
5️⃣ Roast the poblano: Place the whole poblano pepper on an induction-safe griddle and roast until the skin becomes charred. Let it cool, then peel away the dark outer skin.
6️⃣ Clean the pepper: Carefully open the roasted poblano and remove the seeds and inner ribs. Set the pepper aside for the green sauce.
7️⃣ Hollow the chayotes: Remove the cooked chayote halves from the water and drain. Using a spoon, carefully scoop out the soft centers while keeping the outer shells intact.
8️⃣ Save the pulp: Transfer all the scooped chayote pulp into a bowl. Arrange the 6 hollow chayote boats on a plate.
9️⃣ Shred the chicken: Once cooked, pull the chicken apart into small, tender shreds using two forks.
🔟 Sauté the vegetables: Heat a little oil in a skillet. Add the diced onion, carrot, green peas, and sweet corn. Cook until the vegetables begin to soften.
1️⃣1️⃣ Mix the filling: Add the shredded chicken to the sautéed vegetables and gently fold everything together until evenly combined.
1️⃣2️⃣ Stuff the chayotes: Spoon the chicken and vegetable mixture into all 6 hollow chayote halves, filling each one generously.
1️⃣3️⃣ Make the poblano sauce: Place the reserved chayote pulp and the roasted, peeled poblano into a blender. Blend until smooth and thick, with tiny green pepper flecks. No cream or milk is needed!
1️⃣4️⃣ Prepare the skillet: Pour some of the green poblano sauce into a large skillet, spreading it evenly across the bottom.
1️⃣5️⃣ Add the stuffed boats: Carefully place all 6 chicken-stuffed chayotes into the skillet, keeping the filling facing upward.
1️⃣6️⃣ Add the remaining sauce: Pour the rest of the roasted poblano sauce around the chayotes and lightly over the filling.
1️⃣7️⃣ Simmer gently: Allow the stuffed chayotes to simmer in the green sauce until everything is thoroughly heated and the flavors come together.
1️⃣8️⃣ Add the cheese: Place one rectangular slice of white melting cheese over each stuffed chayote boat.
1️⃣9️⃣ Melt the cheese: Cover the skillet with a fitted lid and cook gently until the cheese becomes soft, creamy, and beautifully melted.
2️⃣0️⃣ Serve and enjoy: Uncover the skillet and enjoy all 6 cheesy chicken-stuffed chayote boats surrounded by the delicious roasted poblano sauce!
