Lost Not Found Lost Not Found is a focused on telling stories of travel through narrative essays, high quality imagery, and practical destination guides.

Hi I’m Candiss the person behind Lost Not Found. As an avid traveler, photographer, and lover of the outdoors it has been on my mind for years how I could create a place where I can share my stories and images from the road but I struggled for so long finding the right way to go about it. After much reflection on the subject I came to the conclusion that I want to be able to inspire people (especi

ally my fellow Americans, even more so in light of a lot of recent events…) to travel this world of ours, both near and far, in a conscious and thoughtful way. Traveling extensively over these past 4 + years and having many friends from all over the world has shown me the privilege my ever expanding world view and I hope to share what I learn with you.

Between a busy summer I have found some bits of time to work on some new recipes that have been working with varying success. The most recent one of those that is closer than the rest is this Korean bulgogi inspired shredded beef tostada.
___
I used the instant pot to cook the beef and while it is tasty the flavor isn't quite where I want it to be so I will have to try another variation soon. For the tostada I decided to make and fry up my own tortillas because I felt like bing extra and they were extra tasty.
___
While some work is needed this dish is well on its way to be a delicious and easy meal for larger get togethers or a week of delicious meals (the meat can be used in many different ways!).

Summer is a great time to pull out your instant pot (or similar multi-cooker situation) and use it on the regular. Unlike your stove top or oven it doesn't heat up your kitchen and helps give great results to a lot of different dishes and foods!
___
Take this Taco Truck Inspired Shredded Chicken as a great example. I originally developed the dish as a stove top creation but had to modify it for the Instant Pot when I realized it would be such an easier vessel for cooking it in.
__
This chicken is great served in many different ways but one of my favorite summer time ways (or year round lets be honest) is as a delicious quesadilla. I love serving some pickled onions or DIY Jalepeno Cilantro Lime sauerkraut on the side for a nice hit of delicious acidity!

What is your favorite way to cook on the hot days summer?

Made some chicken thighs with crispy crispy chicken skin for dinner with a saute of fennel, lemon slices, and capers. ‘s 'Skillet Chicken with Crushed Olives and Sumac' from Dining In was definitely the inspiration for this weeknight deliciousness. Served with a sprinkling of fresh dill on top, of course.

It is a heat wave here in the SF Bay Area and this is not a time for using the stove so of course I made bread last night. So maybe not the brightest idea but now I have a great soft and tasty rye bread base to make these no bake open faced sandwiches for all my meals for the next few days! Thanks Sweden for the inspiration!
__
This particular 'tartine' if you will contains all sorts of homemade goodies courtesy of . We start with the bread base (a rye sourdough with a pinch of active dry yeast as an assist), a spread of nice salted butter (store bought cultured butter + flakey salt added), homemade white wine mustard, and pickled red bell peppers as a nice spread base since I have yet to make this cauliflower 'pate' thing I want to try. It was then topped with homemade Mustard Sauerkraut, fried sprouted lentils (the weirdly kind of taste like bacon!), home grown micro greens, and a crushed kale chip.
__
All these homemade goodies made the perfect little open faced sandwich and saved me from using more of the kitchen on this scorching hot day! I am looking forward to trying more combos soon!

What toppings would go on your dream open faced sandwich?

Spring finally is hitting the San Francisco area and it is an exciting time. While we always need the rain it doesn't usually rain for 4 + months straight so just sunny days on the horizon is a very welcome sight. I have decided to celebrate this most wonderful season by posting a recipe for my Extra Herby Green Goddess Dressing on the site (link in profile!)
___
This Green Goddess dressing is good on everything! I love it on a salad, a grain bowl, or as a dip for chips and vegetables! I use 3 kinds of fresh herbs + other flavor enhancers like my most favorite vegan umami (savory flavor hit) Miso!

Do you have any foods you like to make to signal the change of seasons?

These past few weeks have been so busy for me, with work travel to Denver, social engagements, family things, and more it can be tough to have time to cook even though I love it. I usually default to eating something like hummus and some pita for convenience but some times that is not enough and that is where this delicious Taco Truck Inspired Chicken comes in.
___
Inspired by the delicious offerings of a Taco Truck and made in an Instant Pot or other similar pressure cooker it takes no time at all and is super versatile in uses. I love it in a quesadilla for dinner and a top a rice bowl (a la Chipotle) for lunch. Check out the recipe through the link in my profile!

This last 3 day weekend ended up with me spending a lot of time revamping posts on my site to make them better than before! I guess preparing for a trip has that effect on one.

Requiring only 1 bowl and 2 baking sheets these hearty and seedy crispbread crackers are easy to make as they are tasty. Once you make these crackers at home you will be hard pressed to go back to store bought!

Easy to make and delicious scandinavian style crispbread crackers full of seeds. Serve them as part of a nordic breakfast, topped with avocado, or with dip!

One of my favorite small ways to explore food when traveling is checking out the local cafe culture by stopping in a variety of spots. When traveling around morocco a lot the drinks I had at those cafe's was the infamous mint tea which is delicious. Every now and again though my morning coffee needs prevailed and I ordered the caffeinated goodness, which is where this photo hails from.
___
I have a hard time choosing my favorite cafe experience as I enjoy different parts about all of them! Do you have a cafe that is an easy favorite?

These super rainy days here in California have me feeling like having lazy baking days at home. Unfortunately I don’t have the time at the moment but I will just reminisce about these delicious cardamom buns I made from the cookbook . The Swedes have the right idea about life, mid-day coffee break with a sweet? Sign me up!

Do you have any favorite cold weather traditions involving food? I’d love to hear them!
