Chicken Stir-Fry with Veggies & Wild Rice

Ingredients
Chicken & Vegetables:
500g chicken breast, cubed
200g broccoli
150g green beans or snap peas
1 red pepper, sliced
1 yellow pepper, sliced
2 garlic cloves
1 tbsp sesame oil
Sauce Mix:
3 tbsp soy sauce
1 tbsp honey
1 tsp chili flakes (or to taste)
1 tbsp rice vinegar
1 tsp cornstarch + 2 tbsp water
½ tsp fresh ginger
Rice
250g wild rice blend
600ml water
Salt
Directions
Cook rice in salted water for 35–40 mins until soft. Drain.
Mix sauce ingredients in a bowl and set aside.
Heat oil in a wok. Stir-fry chicken until cooked through (6–7 mins). Remove.
Stir-fry garlic and vegetables for 3–4 mins until bright.
Return chicken, add sauce, and toss for 2–3 mins until thick.
Serve stir-fry over wild rice or portion into containers for meal prep.
Notes
Swap chicken for tofu, shrimp, or beef.
Add mushrooms or zucchini for extra veggies.
Store up to 4 days in the fridge
