Garlic & Chili Oil Creamy Spaghetti (150 g)
Ingredients:
β€’ Spaghetti – 150 g
β€’ Butter – 40 g
β€’ Garlic (finely chopped) – 12 g
β€’ Chili oil – 10 g
β€’ Heavy cream – 120 g
β€’ Crushed red chili – 2 g
β€’ Fresh coriander (chopped) – 3 g
β€’ Salt – to taste

Method:
1. Boil 150 g spaghetti until al dente and set aside.
2. In a pan, melt 40 g butter and lightly sautΓ© 12 g garlic.
3. Add 10 g chili oil and mix well.
4. Pour in 120 g heavy cream and stir.
5. Add the boiled spaghetti and toss until coated.
6. Finish with 2 g crushed chili and 3 g coriander on top.

Cheesy Malai Boti Handi πŸ₯˜Ingredients (for 500 g chicken)
β€’ Chicken (boneless): 500 g
β€’ Salt: 6 g
β€’ White pepper powder: 2 g
β€’ Cumin powder: 4 g
β€’ Coriander powder: 5 g
β€’ Garam masala: 3 g
β€’ Kasuri methi (dried fenugreek): 2 g
β€’ Green chili paste: 8 g
β€’ Ginger garlic paste: 12 g (divided)
β€’ Fresh cream: 120 g (divided)
β€’ Butter: 25 g
β€’ Onion (finely chopped): 120 g
β€’ Mozzarella cheese: 100 g
Method
1. Marinate chicken with salt, white pepper, cumin, coriander, garam masala, kasuri methi, green chili paste, ginger garlic paste (6 g), and cream (60 g).
Refrigerate for 2 hours.
2. Heat butter in a pan and cook the marinated chicken on medium heat until about 90% done. Remove and set aside.
3. In the same pan, add chopped onion and cook until light golden brown.
4. Add remaining ginger garlic paste (6 g) and sautΓ© briefly.
5. Add the chicken back, cover, and cook until fully tender.
6. Add mozzarella cheese and remaining cream (60 g). Cover and cook on low heat until cheese melts and sauce becomes creamy.

β€’ Chicken: 500 g
β€’ Fried onions: 40 g
β€’ Tomato paste: 30 g
β€’ Red chili sauce: 30 g
β€’ Coriander powder: 5 g
β€’ Cumin powder: 5 g
β€’ Turmeric powder: 2 g
β€’ Red chili powder: 5 g (adjust to taste)
β€’ Black pepper: 2 g
β€’ Salt: 6 g (or to taste)
β€’ Oil: 50 ml
β€’ Water: 240 ml

1. In a bowl, mix chicken with fried onions, tomato paste, red chili sauce, and all spices.
2. Marinate for 30 minutes.
3. Heat oil in a pan and add the marinated chicken. Cook on medium heat.

5. Cook until the chicken is tender.
6. Increase heat and cook until water dries and oil separates.

Homemade Strawberry
jam Ingredients
1 kg fresh strawberries (washed and cut into
cubes)

700-800 g sugar (adjust to taste)
2 tablespoons lemon juice
Method
1. Place the strawberries in a non-stick pan and add sugar and lemon juice. Mix well.
2. Cook on low heat, stirring gently until the sugar dissolves.
3. Increase the heat slightly and continue cooking, stirring occasionally.
4. Remove any foam that forms on top.
5. Cook until the mixture thickens to a jam-like
consistency.

400 g chicken (cut into strips)

4 g black pepper
10 g fresh green chili
20 g chili sauce
5g onion powder
5g garlic powder

Mix well and marinate for 20-30 minutes
Paratha Dough (500 g flour)

Ingredients:

β€’ Black pepper – 10 g
β€’ Lemon juice – 20 g

β€’ Cumin seeds – 5 g
β€’ Bay leaf – 1
β€’ Cinnamon stick – 1

β€’ Cashew nuts – 50 g

β€’ Ginger – 15 g
β€’ Garlic paste – 15 g

1. Marinate chicken with yogurt, black pepper, lemon juice for 30 minutes.
2. Heat oil, add whole spices, then onion, cashew, green chili, ginger. Cook and blend into paste.
3. In oil, add garlic paste, then prepared paste.

For Chicken Marinade (400g chicken thighs):
400g chicken thighs
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon yellow mustard
1 tablespoon hot sauce

For Peri Peri Sauce:
500g bell peppers

Crispy pratha
Ingredients:
White Flour (Maida): 1000g (1 kg)
Salt: 18-20 g (about 1 tablespoon)

Sugar: 10 g (about 2 teaspoons)
Ghee (for dough): 80 g
Water: 600-650 ml (as needed to knead)
Ghee/Oil (for layering & frying): 150-200 g
Instructions:
1. Make the Dough
In a large bowl, add flour, salt, and sugar.
Mix well.
β€’ Add 80g ghee and rub it into the flour.
Gradually add water (600-650 ml) and knead into
a soft dough.
β€’ Cover and let it rest for 20-30 minutes.
2. Prepare Layers
Divide dough into equal balls.

Roll each ball into a thin flat sheet.
Spread ghee on top and sprinkle a little dry flour.
Fold into pleats (like a fan), then roll into a spiral
(round coil).
β€’ Let it rest for 10 minutes.
3. Roll the Paratha
Take each spiral and gently roll it into a round
paratha.
Do not press too hard to keep layers intact.
