Indian Paradise Flycatcher ( MALE ) or Terpsiphone paradisi is the name of this beautiful bird. It has a long tail feather almost 45-60 cm length. Black crest and crown. The tail feather has streaks of black. I had waited 3 days in my window having a glance of this shy bird flying in and out of the tree next door. I managed to capture when I went down to photograph a few butterflies flying around. I had shot this with 55-250mm Macrolens and hence the quality of images are quality compromised. So what the beauty of enjoying this bird flying around itself is a blessing. What do you say.

Tried Pistachio Fudge and it turned out Pista Halwa.

No worries. Pita Halwa tasted good with just 4 ingredients.
👉Pista 2 cups ( soaked for 30 mins in water )
👉Grated Coconut - 1/4 cup
👉Sugar -1 cup
👉Cardamom powder -1/2 TS

Blended the soaked Pista with Coconut. Prepared 2 string sugar syrup. Added the blended Pista, cardamom powder and cooked till oil starts to separate.
When one perfectly follows recipe of you would get a Burfi / fudge. If you remove from pan a bit early you might end up with PISTACHIO HALWA like mine.
Believe me all at home loved my Pista Halwa. Didn’t tell them that I tried Fudge and landed up in Halwa.😂🤣

Breakfast:
The day started with Vegetable - ( Kala Chana) Salad. ( see album for ingredients )

Lunch:
Rice, Avial
Cud Rice ( with butter, Milk, Onion & spices)
Moong Dal fry
Yam fry
Bhindi fry
Pista Halwa
Potato Smiley ( deep fried store bought frozen ones)
Pappad

MORINGA LEAVES PORIYAL & EGG FRY - 2 recipes
( Egg Appam at Breakfast for Grand kids with left over APPAM batter)
Moringa leaves EGGFRY & Thoran
A QUICK RECIPE:- ( photos in the reels )
Heat oil in a Kadai.
Mustard, Gram Dal , Urad dal
Red Chillies 2-3, Curry leaves. ( TADKA)
Add finely chopped 1/2 cup Onion.
Sauté. Add 3-4 cups of cleaned leaves of Moringa( after removing stem )
Add salt and sauté. When done,
split into 2 portions.
For vegetarians:
PART 1. Add grated Coconut.
Mix well and serve.
MORINGA LEAVES EGG FRY
Part 2:- Beat 3 Eggs with a little
salt, pepper and pour into a Kadai.
When half cooked add the Moringa
leaves cooked ( before adding Coconut ) and mix well and serve.
Lunch Menu:
Rice & Radish Kuzhambu, Thogaiyal, Coconut milk rice ( by family friend )
Moringa leaves Poriyal & Egg fry,
Instant Rasam made with Cinch eats.

Don’t judge the book by its cover.

Yes. The Masala Pappad starter looks so very Colourful.

Did you expect the lunch very exotic?

We’ll see for yourself. By the time arranged for photography the Masala Pappad had become soggy. Thank God, had made only two. Mixed all the ingredients and made a MINI PAPPAD CHAT and it was crispy and yummy too.

A simple lunch.

👉Rice
👉Avarakkai koottu / Broad beans Dal in Coconut gravy
👉Cabbage Green peas Thoran
👉Masala Pappad
👉Bittergourd chips
Curd ( NIP )

Karela chips / பாகற்காய் வறுவல்
Tips:
👉Slice Bitter gourd thinly ( Mo need to remove seeds ).
👉If you need it less bitter coat sliced bitter gourd with salt & Turmeric powder for 30 mins and squeeze to release water.
👉 Then coat sliced pieces with Besan / Gram flour, Rice Flour, Red Chilly powder so that they are not over coated. ( it will be Bhajji then)
👉Adjust salt. Do not add any water. The patches of flour should be seen.
👉Deep fry in medium flame till crispy brown stage is reached.
👉Keep in open tray for sometime till it cools and it retains the crispness before storing in airtight container.

Arbi / Taro root / Colacasia / சேப்பங்கிழங்கு Roast.
( 𝐅𝐥𝐢𝐩 𝐚𝐧𝐝 𝐬𝐞𝐞 𝐈𝐍𝐓𝐄𝐑𝐄𝐒𝐓𝐈𝐍𝐆 𝐁𝐑𝐄𝐀𝐊𝐅𝐀𝐒𝐓 🤤🤔😍 )

Many ways of preparing Taro Roast. I follow the below recipe for tasty ,crispy roast.

Wash and pressure cook Taro ( 300 gm ) with adequate water for one whistle in medium flame. Peel skin and cut them to small pieces.
Add the following to the Taro pieces and mix well.
Besan / Gram flour - 3 TBLS
Rice flour- 1 TBLS
Red Chilly powder -1 TS
Turmeric powder- 1/2 TS
Asafetida-1/4 TS
Salt to taste.
Ensure that all pieces are properly coated with spices. Deep fry till brown & crispy.

Tips:
👉Use water sparingly to mix spices. ( one TBLS )
👉The White colour of Taro may be
Seen here and there. ( If the Besan is used more - this will turn into Bhajji)
👉If too much Rice flour is added the coating becomes too hard.
👉Sine the Taro is already cooked, the outer layer alone needs to cook and turn crispy. So do not cook in low flame. ( Will drink too much oil )
👉Cook under medium flame till crispy and enjoy.

Rice & Nalla Karam Podi ( Chilly powder from Andhra )
Noona Vankaya Koora / எண்ணை கத்தரிக்காய் ( Andhra style )
Carrot salad
Sweet Potato fry
Pappad
Curd ( NIP )

Breakfast: Upma / Kichadi
Tips:
👉 Add Colourful 🥦🥕 vegetables 🥗
( See photo album )
👉 To avoid over cooking, Broccoli & Cauliflower like veggies must be blanched, sautéed and added to Kichadi after cooking up. Keep the crunchiness.
👉 Keep the semolina : water ratio @1:2 ( including to cook veggies).
👉If required keep a little hot water ready and add a TBLS or little more .
👉 To avoid lumping of Semolina / Rava sauté the vegetables, Onion so that they are mostly cooked and add the Semolina and toss well. Then add water and cook under low flame.

Sunday Lunch at home after 5 days of travel and outside food.

Travel includes Temples and wedding.
After many decades when I saw Vallalar temple at Vadalur, I was surprised at the development at the temple and around the former village ( now a town ).
Thiruvavaduthurai is one of the Shiva Temple( between Mayavaram & Kumbakonam ) மூவரால்பாடல் பெற்ற ஸத்தலம். Visited this Masilamaneeswara temple.

Last temple visit - Vaidheeswaran temple. ( Shiva who cures ailments ).
My lunch plate-

INDEPENDENCE DAY-
Celebrations at Coimbatore. After my Cataract surgery done a couple of weeks ago, ventured out for the first time with my camera.

1. My daughter pinning the flag. ( selfie)
2. Flag hoisting in our colony
3. & 4. Dragon flies flying in “Tandem”.

“Fly in Tandem” - a behavior by the dragon fly to stick on to his mate post copulation and keep flying around till the female safely deposits the eggs in water / plant for fertilization safely. Some say, the male ensures that no competitor disturbs his mate till it deposits the eggs.

I couldn’t resist capturing this wonderful ( but not rare ) act of these insects which were flying around.

The usual mini culturals, sweet distribution and events did follow the flag hoisting to complete the 75th year completion of Independence a memorable one.

Banana stem fry & Cutting Tips

Banana stem has several health benefits. The removing of fiber is very important to make it palatable.
( I recall my Mom removing the fiber by rolling in the index finger as she keeps cutting in the traditional “Arivalmanai” kitchen cutting tool. )
Here I have used a knife and demonstrating how easily the fiber is removed. ( Cannot match cutting in the traditional tool )
After chopping fine remember to dunk the chopped stem in Buttermilk immediately to avoid change of colour.
The ingredients required for preparation of simple stir fry is in the video. ( Optional to add one or two TS of Sambhar powder if you want it spicy )
Finally can add grated Coconut for added taste and garnish with Chopped Cilantro.

Potato Cheese 🥚Omlette- Have you tried?

Have a look and if interested see the recipe too. Yes. POTATO and EGG. I was wanting to do this for long. Only today made it.

Ingredients:-
Egg -3,
Grated Potato -2-3,
Green Chillies-1,
Pepper powder - 1/2 TS
Maida -2 TBLS,
Red Chilly powder -1/2 TS
Turmeric powder -1/4 TS,
Garam Masala -1/4

Mozzarella grated Cheese - 1 cup
Cilantro -chopped -3-4 TS
BUTTER -1 TS salt to taste.
PREPARATION:
Whisk 3 eggs in a bowl.
Grate 2-3 Potatoes finely and wash in water to remove starch and keep aside. For the recipe in full see the video please.
Ensure to keep flame low and cook first side 5-6 mins. Transfer to a plate and reverse the Uncooked side to the pan. Keep lid covered. Another 3-4 minutes the Cheesy, Potato egg Omlette is ready.
