Singleton is home to three distilleries: Glendullan, Dufftown and Glen Ord. Established in 1838, Glen Ord Distillery is one of Scotland's oldest distilleries. The wine is known for its natural aroma and smooth taste.
Singleton's pioneering use of long fermentation and slow distillation creates a harmonious, smooth and unique malt whiskey.
Using long-term fermentation technology, fermentation lasts 75 to 80 hours, producing wine with rich fruit aroma.
After fermentation, the juice is placed in a copper still. Copper corrects the body of the wine and makes the juice more pure. With slow distillation, the juice is in contact with the still for a longer period of time. This allows more impurities to be adsorbed by the copper, creating The Singleton's unique mellow and smooth taste.
The newly distilled spirit is diluted and aged in oak barrels. Different oak barrels will bring different flavors to the wine. After being burned and carbonized, the bourbon oak barrels can bring out the vanilla and caramel flavors in the whiskey; the European aged oak barrels that once held Spanish sherry can bring out the sweet fruity aroma and mellow and mild taste.
