🔥 New episode of The Food Envy Podcast is live

I travelled down to Dorset to film this one with Ross Duncan from The Open Flame Experience, surrounded by fire, smoke and some incredible ingredients.

We talk about the visual side of open-flame cooking — from colour and plating to how boards, platters and table settings can elevate even the most rustic food.

A huge thank you to Hope Farm for hosting us in such a beautiful setting, and to Katie for the stunning tablescaping that brought the whole experience together.

After the conversation we also filmed some live fire cooking and plating demos, so you can see how Ross translates these ideas straight from the fire to the plate.

Same dish.
Same ingredients.
Two completely different plates.

Which is your favourite? Swipe 👉 to see both versions.

In the full video on my YouTube channel, professional food stylist Lou Kenney plates this blood orange and octopus salad twice… one in a more expressive, magazine-style way, and one with a more minimal, restaurant-style approach.

It’s fascinating how small decisions: negative space, grouping, direction, restraint completely change the feel of a dish.

If you care about how your food looks, there are some brilliant practical tips in this one.

Less is more. But only when you truly understand what to leave out.

In this Food Envy Podcast conversation with (food stylist, cookbook author, recipe developer), we talk about why restraint is often harder than decoration — and how thoughtful styling can elevate a dish without overpowering it.

In the full podcast on YouTube, we dive into:
• What chefs and home cooks can learn from a professional food stylist
• Colour theory on the plate (and why it matters more than you think)
• Where to get inspired
• Her new cookbook, Hooked
• How to use negative space
• The importance of collaboration
• Garnishes: how to handle them, care for them, and avoid overusing them
• Why “simple” plating is often the most technically demanding

If you care about the visual side of food — how plates are designed, not just decorated — this one’s for you.
