Four dishes I keep thinking about from our night with Jessica Rosval 🍽️
Jessica opened her side of the table with Gatto Mammone, eggplant, burnt lemon and Royal Oscietra caviar, a dish that felt bold and grounded at the same time, the kind of combination that only makes sense once you taste it. Then came her Su Isténe e Su Argiolinu, lamb loin and sweetbread with mediterranean fregola, probably the most personal dish on her entire menu. You could taste Sardinia in every bite, and you could tell exactly how much of herself she put into it.
On my side, I served my Scottish Loch Duart salmon, paired with Hanse prawn, cocktail sauce and a tomato water reduction, one of the calmer moments of the evening, clean and precise. Right after came my veal sweetbread glazed in tamarind, with jalapeño, smoked fish emulsion, yuzu marmalade and an eel bouillon underneath, a dish that took a bit of courage to put on the table but paid off completely.
Four very different approaches, shaped by two very different places, and somehow they made complete sense next to each other. That's what I love most about these evenings.
