Story time. ❄️📖

If you've ever wondered how The Winter Cabin Cookbook came to be, why it's taken nearly 10 years to get here, and why I've been a little quieter than usual since December last year... here's the story.

What started with an ice cream freezer full of Arctic crab legs and a love of good food became the dream of a cookbook. Over the years, the idea grew, the list of cabins got longer, we met so many wonderful people and learned a lot along the way.

There have been plenty of twists, changes and a lot of work behind the scenes to get it to where it is today.

So, here's the story of how we went from cabin to cookbook, and why I've been keeping this one a little more under wraps since December. 🤍

I think my cooking mojo has mostly returned. I'm on a quest to cook through my pantry and freezer stash, and I'm constantly craving thick chocolate chip cookies this winter. But I haven't had a chance to make my own yet (probably a good thing!)

Taking things a bit slow after dealing with a few massive weeks there of non-stop work. I wasn't looking after my body and it's taking me a little while to recover, but I'm slowly getting back the mojo, trying to get some sunshine and finding joy in the little things.

It still feels a little surreal to be writing this...
Later this year my cookbook, The Winter Cabin Cookbook, will be hitting bookshelves around the WORLD!

This book has been eight long years in the making. Ewen and I first pitched the idea back in 2020, inspired by the winters we had spent in traditional cabins across Sweden and Norway. At the time, a cookbook about gathering around the table in a cosy cabin wasn't quite what the world needed, so we did what we could at the time, but it didn’t get the recognition it deserved.

Late last year, one meeting changed everything. I was given the opportunity to revisit the concept, rework it, and finally bring this book to life.

Inside you'll find nearly 80 Scandinavian-inspired recipes, from comforting soups, seafood and hearty dinners to Nordic baking, fika favourites, desserts and warming drinks. Woven throughout are stories from my travels, along with beautiful photography by Ewen Bell / PFT from the Arctic.

This book wouldn't exist without my husband, Ewen. He believed in the idea from the very beginning, encouraged me to keep pursuing it, and was the driving force behind bringing the project to life.

More than anything, I hope this book inspires you to slow down, gather the people you love around the table, and create your own little winter cabin moments, wherever you are in the world.

My favourite part of the trip to Malaysia was Penang.

Originally we were going to stay over in Batu Ferringhi by the beach, but at the last minute we changed our accommodation to George Town so we could be closer to the food. Zero regrets.

My favourite night was wandering around Kimberley Street Night Market, eating at little tables set up on the street while the woks fired away beside us. Getting smoke blown all over me from the wok felt like some sort of spiritual experience.

It was also the night that finally broke me.

After 10 days of what felt like constant eating, I hit my limit. I barely ate anything after that night, and it took me about a week to get back to my normal appetite. I genuinely didn't think it was possible for me to overdose on food... but apparently it is.

Would I do it all again? Absolutely. No regrets.

Nasi kandar wasn't really on my radar until returning to Malaysia after more than 20 years.

I'm not going to name this particular spot because, unfortunately, it looked better than it tasted. Even though everything seems to be the same colour in the photos, each curry had its own distinct flavour. We chose a mix of spicy and milder dishes as Dad doesn't handle much heat. The standouts for me were the sotong (cuttlefish) and the ayam (chicken).

Ordering nasi kandar reminded me a little of choosing dishes at a Chinese food court in Australia. You start with rice, then pick the curries and sides you'd like to go with it. Mum and my aunties took charge of the ordering while I did what I always do and ushered everyone outside where the light was better for photos. There was a fan, I promise!

Special shout-out to the okra, which I didn't actually eat, for bringing some colour to the table and developing a bit of main-character syndrome in the photos.

I would have loved to try another version if we'd had more time, but I'm grateful to have finally experienced this Malaysian classic.
