because it isn’t summer without a s’mores treat, i am turning Belsoy’s dark chocolate dessert into the most decadent s’mores cups! while these smooth, indulgent dairy-free desserts are perfect for a sweet treat on their own since they are low in fat, a source of fibre & naturally lactose & gluten-free, this recipe below truly takes it up a notch with the addition of your favourite campfire flavours! visit Belsoy for more info 🍫🔥🍫

ingredients:
1 cup graham cracker crumbs
2 tablespoons sugar
2 tablespoons melted vegan butter
1 sleeve Belsoy Dark Chocolate Dessert
3 tablespoons water
1/2 cup granulated sugar
1/2 cup corn syrup
2 large egg whites
1 teaspoon vanilla extract

directions:
in a small mixing bowl stir together graham crumbs, sugar & butter until combined. evenly divide mixture amongst 4 short serving glasses & press into a firm crust. top with the Belsoy Chocolate Dessert. to a saucepan over medium heat add the water, sugar & corn syrup. without stirring, cook until the mixture reaches 240(f) degrees, known as the soft crack stage. as the mixture cooks, whip the egg whites to medium peaks in the bowl of a stand mixer fitted with the whisk attachment. slowly pour in the sugar mixture & beat until fluffy, about 5 minutes. add the vanilla extract & beat until combined. transfer to a piping bag & top the dessert cups with a generous dollop of the marshmallow fluff. brown the top with a culinary torch & serve!

ingredients

for the puree:
1 pint fresh strawberries, hulled
3 tablespoons sugar
1 teaspoon vanilla extract
1 pinch salt

for the latte:
1/3 cup Belsoy Creamy Soya Preparation
2 teaspoons sugar, or to taste
1 teaspoon vanilla extract
2 tablespoons strawberry puree
2 shots espresso

directions

for the puree:
to a saucepan over medium heat stir together strawberries, sugar, vanilla & salt. cook, constantly stirring, until strawberries soften. puree using an immersion blender & let cool to room temperature.

for the latte:
to a measuring cup add Belsoy, sugar & vanilla. froth until mixture is lightly whipped. to a tall glass add the strawberry puree. fill the glass with ice. finish with the espresso & frothed Belsoy.
