Brouwerij Lindemans

Lindemans is another location that just checked all the boxes of Lambiekland for me. Surrounded by farm lands and streams, gravel cycling paths leading out from the front of the brewery, and of course, the smell of Lambic from their Foeder room.

But the brewing installation here is one of those must-sees that I love photographing. Brass kettles in front of arched windows that look out onto a pasture with a few fruit trees, that’s tough to beat.

Always looking forward to my next visit.

Lambic doesn’t necessarily need an explanation. It can be fully enjoyed without flavour analysis, without exploring its historical context, and without the perfect food pairing. But when you come across someone who enthusiastically shares their knowledge and appreciation for Lambic, it certainly does elevate the experience.

And that’s how I met Johnathan. Through Curieuzegeuze (and his famous Lambic trailer) he offers beer tastings, food pairings, and brewery tours to help share his love of Geuze. You can feel his passion the second he starts talking.

He’s also been very supportive of my work here, which I appreciate to no end. When I saw Johnathan about two weeks ago, he joked how every day he was checking his phone to see if his gallery was up. Well, today is the day, my friend. Cheers!

Brouwerij Kestemont

I visited Kestemont on my first day of shooting, and it perfectly set the tone for the entire summer. They’re located on this beautiful square farm courtyard with the brewery and barrel rooms slightly disconnected from a nice bar area. And then it opens up to these really scenic hiking trails and paths right outside of their back door.

A perfect start to my summer travelling around the Pajottenland.

So it also felt like a fitting finale when I visited them again near the end of the project. I stopped by Wim’s house, just down the street from the brewery, where he also maintains a lively farm full of fruit trees and other produce. I got to photograph him harvesting red and black currants, and even some ripe apricots from a few rows over.

Geuzestekerij Odilon

Seeing the agricultural side of Lambic production is always a treat. Getting to feel, and taste, the raw ingredients beforehand is something I really enjoy.
�We all see the finished product on shelves, but we don’t always know the work involved.

So driving to Bever to spend the day with Thomas and his family was especially enjoyable as they were processing Mirabelle plums that had just been delivered from a small farm over the French border.

But even though Thomas is one of the newer producers, it doesn’t mean Geuzestekerij Odilon isn’t a multi-generational family affair like some of the bigger players.

Thomas’ father, whose old Toyota was parked out front, was weighing and sorting plums.

And his daughter, who was learning to walk as Thomas was learning to blend, was all smiles as she poured baskets of plums on Lambic.

In de Verzekering tegen de Grote Dorst

Right as I walked in to Grote Dorst, I started seeing some familiar faces. Not uncommon at all at a place like Grote Dorst, though. If you know Lambic, you know this café.

But there was one couple that I just couldn’t place. English-speaking and knew a thing or two about beer, but it was bugging me I couldn’t figure out where I knew them from.

When Kurt came over to take their order, the man just responded with “I’m so excited to be here!” So I knew they weren’t living in Belgium…

Once we started chatting, it didn’t take long to connect the dots. Will and Linda from Seattle. We had briefly shared a table at the 2018 Kerstbierfestival in Essen, comparing Untappd check ins and talking about our travels.

I’ve already shared my favourite coolship, my favourite photo, and my favourite gallery. So now…I am sharing my favourite backyard to drink a beer in.

People talk about Lambic being an “experience” beer, and that’s the best way to describe my visit with these guys.

For Koen, Filip, Jan, and Wiet, this is a sort of weekend project. They all have separate careers but on Fridays, they meet at the brewery, which also happens to be Koen’s house.

There’s a detached building where a tiny brew kit resides, and an even smaller coolship on the half-floor above that was Koen’s bedroom as a child.
�There’s a barrel room underneath the garage where Filip was pressing rhubarb that had just spent a few months on Lambic.

And then an even tinier garage where Wiet and Jan were climbing ladders to install insulation as this will be used for bottle conditioning moving forward.

Donder is fun for them. It’s about nothing more than doing something they all enjoy—together. And sometimes, that’s sharing a beer in the backyard.

Café De Kluis

This was another return visit for me after shooting here for my Café Society series over on Belgian Smaak , and the story here is great.

If you look closely behind the bar, there’s a laminated photo of two actors that you’d be forgiven for not knowing if you don’t live in Flanders.

Actor Hubert Damen, famous for his role as police commissioner in the crime drama “Witse”, and his fictional partner, Inspector Van Deun, are photographed sitting in the café for a Payconiq print ad (Payconiq is a mobile payments company here in Belgium).

In the series, Café de Kluis was their local pub and the real locals, the patrons who have been drinking here since 1885, were often cast as extras in the background.

The beer list is great, the walking trails nearby are beautiful, and it’s definitely worth a visit the next time you’re in town.

De Cort Distillery

I trust I’m not the only one that has a list of their favourite coolships scattered around the Pajottenland, but for me, De Cort is surprisingly high on that list.

I say surprisingly because it wasn’t until I started this project that I learned they were brewing Lambic. I had known their name, and the respect it carried, as a distillery. But the barrel room full of Lambic that Anthony showed me around was such a cool discovery.

They even use part of their 5000L, custom-made Holstein still—the alembic—for boiling Lambic. Hence the name, Project A’Lambik.

My respect for Lambic producers stems not only from the difficulty of producing the beer, but also from the difficulty of maintaining a successful Lambic business.

🍾It takes time—years—to produce an Oude Geuze, so the results of decisions and investments made today aren’t immediately known, or guaranteed. But as I’ve said before, there’s a certain perseverance these producers all share that is nothing short of impressive.

There’s not much new I can say about Boon that hasn’t been said before. Their story is well known in the Lambic world, and even the beer world outside of that.

🎩But I can add my own “tip of the cap” to Brouwerij Boon as they just recently celebrated their 50th anniversary. In fact, I was honoured to capture the photos of their special edition Mariage Parfait to recognise that anniversary.

Cheers to 50 more, my friends!

Ambreus

Ambreus was one of the (surprisingly) many smaller blenders that I had never heard of before starting this project. But I’m so glad I discovered them.

I spent the day with Jean-Pierre, father of one of the founders, whose garage was the original barrel storage for their blends back in 2019. He saw the younger generation enjoying the process and asked if he could join the fun.

🪑In 2021, when more space was necessary, they converted an old café (De Kleine Ardennen) in Buizingen into their new barrel room, warm room, and packaging space.

It’s such a cool place with a horseshoe-shaped barrel room filled with Lambic from Den Herberg, De Troch, and Lindemans.
