Another one from the archives on this dreary Saturday afternoon.

Moroccan style Roasted Pumpkin, steamed broccoli + massaged kale from the garden. Tossed with loads of herbs 🌿 mint + parsley, edamame, a touch of chilli, a dash of olive oil and squeeze of lemon. Delicious as a main or side dish, lunch or dinner...you choose. Either way, delicious and nutritious.

All you need is a drizzle of maple syrup and a fine dusting of coconut sugar to sweeten your day. The rest is a bonus!

This one is a throw back to when I had endless energy to bake and photograph. I’m recovering from the flu 🤧 and can’t wait to get my mojo back.

Weekends are for baking and these wholesome spanakopita really hit the spot.

I grew up on Greek pita and have been making vegan versions for years now, even my mum approves!
These have almond feta, soft tofu and sautéed mixed greens from the garden (spinach, silverbeet, spring onion, leek, parsley). Wrapped to form individual ‘snail’ pieces with brushed with olive oil and sprinkled with sesame and nigella seeds. They are versatile depending on what you have available, freeze well and are great for lunch boxes.

Summer vibes.

It’s been a while friends and hope you’ve all been well. We have a new family member, a fur baby named Milo who is a beautiful puppy and good at keeping us amused and very busy. So sleepless nights, toilet training, playing games and preparing meals are part of the plan and for the moment he stays mainly at home until he is old enough to go for walks. I’ll post a picture on stories. 🐶

Anyway, back to this delicious summer treat filled with strawberry, mulberries, chia jam, coconut yogurt and crunchy granola. Packed with goodness and totally delicious.

Celebrating the last night of lock down here in Melbourne, let’s hope things improve for everyone all across the globe.

Happy Thursday friends.

It’s been awhile as I needed some time. Time for me. Time for my family. I hope you have all been keeping well and I’m sorry if I’ve missed your posts.
I noticed that are holding challenge with day 1 - Swirls.

This leek pita is a giant swirl filled with lots of leek, onion, some tofu and vegan feta. It’s delicious, vegan and easy to make. I usually make a few extra and pop them in the freezer for times of need. I used olive oil for brushing the layers of and finished with nigella seeds. I never measure anything and go by feel and what I have available. Sometimes it’s spinach, kale or silverbeet.
