EGGOCADO TOAST WITH HALLOUMI CROUTONS
Serves 2

INGREDIENTS
2 small avocadoes
2 hard-boiled eggs
40 g roasted red peppers
1 clove minced garlic
½ lemon, juiced
½ red onion, diced
salt and black pepper

1 tsp olive oil
½ tsp oregano
125 grams halloumi
Toasted sourdough

GARNISH OPTIONS
• Cracked black pepper
• Olive oil
• Lemon juice

Smash and combine the first 7 ingredients in a bowl.
Fry the diced halloumi cubes in the oil and sprinkle with oregano.
Spoon the eggocado mixture onto slices of toasted sourdough and top with the halloumi croutons and your choice of garnish options.

ORECCHIETTE WITH BROCCOLI & SPINACH PESTO YOGHURT SAUCE
Serves 3-4
INGREDIENTS
250g Greek yoghurt
3 garlic cloves
2 tsp pesto
1 tbsp grated parmesan cheese
1-2 tbsp extra virgin olive oil
salt and black pepper

250g orecchiette pasta
1 head broccoli, chopped
3-4 cubes of thawed (frozen) spinach

GARNISH OPTIONS
• Toasted pine nuts
• Dried chilli flakes
• Parmesan cheese
• Cracked black pepper
• Olive oil
• Lemon juice

METHOD
In a food processor, blend the first 6 ingredients until you get a smooth, runny sauce.
Bring the pasta to a rolling boil for 5 minutes in salted water then add the broccoli and spinach for the remainder of the cooking time until the pasta is al dente.
Drain into a bowl and return pasta to the pot. Keep some of that pasta water!
Add the yoghurt sauce to the pasta, a little bit at a time, stirring through. Add pasta water as needed to thin out the sauce.
Serve with your choice of garnish options.
