in-n-out animal style baked potatoes 🤏🏼
crispy baked potatoes loaded with cheesy ground beef, caramelized onions, pickles, pepperoncinis, and homemade burger sauce. basically an animal style burger, but in baked potato form.
ingredients:
• 4 large russet potatoes
• neutral oil
• salt + black pepper
• butter
burger sauce:
• 1/3 cup mayonnaise
• 4 tbsp pickle relish, drained
• 3 tbsp ketchup
• 1 tsp sugar
caramelized onions:
• 1 large onion, finely diced
• 1/2 tbsp neutral oil
• 1/4 tsp salt
• 4 tbsp water, as needed
ground beef:
• 1 tbsp butter or avocado oil
• 1 lb 90/10 ground beef
• 3/4 tsp salt
• 1/4 tsp black pepper
• 1/2 tbsp worcestershire sauce
• 1/4 cup beef broth
• 1 tsp yellow mustard
• 4 slices american cheese
toppings:
• dill pickle slices
• chopped pepperoncinis
• chopped parsley
instructions:
1. preheat oven to 425°f. wash and dry the potatoes, pierce each one a few times with a fork, rub with oil, and season generously with salt.
2. place potatoes directly on a baking sheet or oven rack and bake for 45–60 minutes, flipping halfway through, until crispy on the outside and fork tender in the center.
3. while the potatoes bake, mix together the mayonnaise, pickle relish, ketchup, and sugar to make the burger sauce.
4. heat oil in a pan over medium heat. add diced onion and salt and cook for 15–20 minutes, stirring occasionally. add water a tablespoon at a time as needed until deeply caramelized.
5. melt butter in a skillet over medium-high heat. add ground beef, salt, and pepper. stir in worcestershire sauce, beef broth, and mustard. cook for 6–8 minutes, breaking up the beef, until browned and fully cooked.
6. divide the beef into 4 portions, top each with american cheese, and let the cheese melt.
7. slice open the baked potatoes and fluff the centers with butter, salt, and pepper.
8. top each potato with cheesy ground beef, caramelized onions, pickles, pepperoncinis, and parsley.
9. drizzle generously with burger sauce and serve warm.
