I did not expect 24 hours in Hiiumaa to make me want to come straight back 🌿

It had been many years since I last visited, and somehow I remembered getting there as much more of a journey. This time, the ferry ride was so smooth and went by so quickly, and I loved seeing how much Hiiumaa had evolved since my last visit ✨

We spent our 24 hours around Kassari, staying at Kassari Cottage near Orjaku harbor. I loved waking up to views of the sea, walking beside wildflower fields, seeing animals and birds everywhere, and being just a few minutes away from coffee by the water ☕️ There was also so much to explore nearby, including Hiiu Õlle Koda, that we barely had to venture far.

kassaricottage was such a beautiful place to experience it all from. I loved the architecture, carefully chosen designer pieces and all the little details, while still feeling so connected to the nature around us 😌

We only saw one small part of Hiiumaa this time, but it definitely made me want to come back for longer and explore more of the island 🌊

I did not expect 24 hours in Hiiumaa to make me want to come straight back 🌿

It had been many years since I last visited, and somehow I remembered getting there as much more of a journey. This time, the ferry ride was so smooth and went by so quickly, and I loved seeing how much Hiiumaa had evolved since my last visit.

Week 2 in Estonia was when we started exploring a little more, including Haapsalu and the island of Hiiumaa ✨

It has become a tradition to visit Hestia Hotel Haapsalu Spa with my mom, aunt and cousins. Haapsalu isn’t too far from Pärnu, where our home is, and we love the spa there 🧖🏼‍♀️ We also somehow created another tradition of having dinner at Wiigi Kohvik and lunch at Hapsal Dietrich the next day 😁 The fish patties and cakes are literally a must try! 🙌🏼

There are a bunch of foods I miss when I’m in the US, and one of them is moonirull, which is kind of like a swirly cinnamon bun, except it’s filled with poppy seeds and topped with powdered sugar. Another must try! Estonia is honestly full of delicious pastries, which has made me very picky when visiting bakeries and coffee shops in the US 😂

We also made our way to Hiiumaa and stayed at kassaricottage , co-founded by my very sweet friends Iti-Pätrik Järve and Kristjan Klasen 💛 I’ve been following along as they built it and couldn’t wait to finally visit in person. It’s such a special and absolutely gorgeous place. The architecture and interior design are incredible, and there is so much to see and do around the island. The fresh air, wildflower fields, animals and birds, the sea… waking up to that view in the morning was literally what dreams are made of 🥹 We definitely didn’t have enough time to explore everything, so I already know I want to come back for longer next time.

Now that I only have a few days left in Estonia, I’m realizing more and more how much harder it gets to leave every time. It also makes the reason I’m working so hard on building my own business feel even clearer. I want to create a life where I can spend more time with the people I love, because that time is irreplaceable, and experience more of the country I come from. Estonia is so rich in nature and will forever have such a special place in my heart 🇪🇪

The matcha lemonade your summer was missing 🍵🥭

Refreshing Mint Lemonade is layered with frothy matcha and creamy Mango Frozen Dessert for the perfect mix of citrus, earthiness, and sweetness.

To make it:
🍋 Fresh Fizz Sodas Mint Lemonade
🧊 Ice
🍵 Matcha of your choice
🥭 Frönen Mango Frozen Dessert

Assembly:
Pour the Mint Lemonade over ice, prepare your matcha, then slowly pour it over the lemonade. We used the NŌARA frother to make ours smooth and frothy. Top with Mango Frozen Dessert for the perfect tropical finish.

The cold foam every banana bread lover needs to try 🍌☕️

I prepared Not Your Average Superfood Coffees Superfood Coffee as a cold brew and topped it with homemade banana bread cold foam 🤤

Banana bread syrup:
• 1 mashed banana
• 1/4 cup brown sugar
• 1/4 cup maple syrup
• 1/2 cup water
• 1/2 tsp vanilla bean paste
• 1/2 tsp cinnamon

Simmer for 10 minutes, let it cool and then blend until smooth in a blender.

Banana bread cold foam:
• 20 g milk
• 40 g heavy whipping cream
• 2 tbsp banana bread syrup

Froth until thick and creamy using the NŌARA frother ✨

To assemble:
Pour the cold brew over ice, top with the banana bread cold foam, and finish with a sprinkle of cinnamon 🤎

I was sick for years before anyone thought to ask why 🙄

For most of my life, doctors treated my health issues as separate, unrelated problems. Round after round of antibiotics, but no one ever looked deeper. About two years after moving to the US, my body completely crashed. I was already on thyroid medication, but I still felt terrible. That’s when I realized medication alone wasn’t going to fix this.

I had to actually look at my lifestyle, my food, my ingredients, my stress, my sleep. So I started reading labels, removed what was triggering me, and got a lot more intentional about what I was putting in my body. Slowly, things started to shift. I can tolerate dairy and even some gluten now, things I couldn’t touch before.

I’m not trying to be perfect or live in fear of food. I just know my choices affect how I feel, so I still eat this way most of the time. It’s how I manage my health and protect the progress I’ve fought for 💛
