Ginger and Almond Financiers 🐚

These divine oceanic morsels are one of my favorite things I baked this year (besides my Lilo & Stitch cake). The process of molding these tiny marzipan shells is quite therapeutic.

I long for a place just like the Shell Cottage. A palace made out of shells and only healing the waves of the ocean behind me. So often when I am brainstorming about new recipe ideas I find myself back in the kitchen of that cottage and bring out these moist, yet powerfully spiced financiers topped with a cloud like swiss meringue buttercream.

32 years around the sun 🧜🏽‍♀️

Last Friday was my birthday, every year I make my own cake, of course hehe ;) lately I have been dreaming about sea dragons, riding them into the depths of my soul.

This cake is a reflection of that:

Passionfruit and lemon sponge cake

Butterfly pea tea pond (with mermaid tails on top)

Filling: coconut and blueberry spread with lemongrass and lime leaves

Vegan Swiss meringue buttercream with sea salt and vanilla

I used different decorations to make the cake look more liquid.

Soaked rice paper in butterfly pea flower tea, air dried, they just look like waves

Marzipan to make the tails and shells

Vegan white chocolate

Agar agar gem stones(water drops)

Coconut flakes

Candied Ginger

Crushed vegan cookies (sand)

Edible pearl spray

I had an incredible birthday this year, been spoiled rotten. I am so grateful for my loved ones and I am going to make the most out of my early thirties because they feel amazing so far. Aging is a privilege that makes life so much richer and yet mysterious.

It is time to be mermaids again🧜🏽‍♀️

Here are some of my favorite oceanic creations:

🐚 Siren Board: crystal sugar gummies, chocolate madeleines, plum filled golden bars and coconut truffles

I have been obsessed with the ocean since I was a child. Every essay were about the mysterious creatures that live in the vast sea and wanting to be an actual mermaid. Now that I am an adult it never faded. The relationship got even deeper.

We need to protect our oceans and especially the creatures that live in them.

Lavender and Caramel Flapjacks 🍯

As you may have known I traveled to the Scottish Highlands last Autumn. Wherever I went flapjacks were left and right. It is essentially an oat treat with nuts and seeds. The perfect fuel for a brisk walk through the remote nature that Scotland has to offer. I have tried many version and I wanted to bring my own spin to this wonderful snack with:

Lavender
Caramel from condensed coconut milk
Lemon zest
Cinnamon dates
Sour dried apricots
Roasted sesame seeds
Pumpkin seeds
Stem ginger
Macademia nuts
Cranberries
Pecans
Almonds

And of course lots of oats!

This is the perfect way snack to watch the last episodes of Outlander that just returned to our screens. To my absolute horror I found out that they won’t air the final season until March 2027 in The Netherlands, so it will be a challenge and mission to avoid spoilers at any cost.

In the meantime I will be continuing this Outlander series with the footage I made in Scotland until I can reunite with Sassenach and Jamie, next year.

Welcome to a Stranger Things Episode!

Today we dive into Stranger Things Season 4.

One of my favorite parts from the last season were the ones with Argyle. He is so excentric and not afraid of being himself.

In this episode we are invited into the Kitchen of Surfer Boy Pizza. A chill pizza place with amazing and tasty pies. And most of all plantbased!

On the menu:

Classic Margarita - tomato and basil sauce, 2 different kinds of mozzarella, parmesan and basil oil

Spicy Salami - spicy tomato sauce, salami, grilled olives, chili oil, parmesan, shredded mozzarella (inspired by Diavola pizza)

Yellow Blast - yellow cherry tomato sauce, parmesan, mozzarella, yellow peppers and basil oil

The full written recipes will be published soon to my new website but for now the recipe for the pizza dough and spicy tomato sauce will be in the description.

Pizza dough recipe:

350 bread flour
150 all purpose flour
7 g yeast
1 tsp white granulated sugar
350 ml water, room temperature
2 tbsp oregano oil
2 tsp salt

1. In a large water jug, add the water, sugar and yeast.
2. Mix until combined and let this sit for at least 15 minutes to activate.
3. In a large mixing bowl add the two types of flour. And salt.
4. Make a well in the centre and pour in the ye**ty water.
5. Knead until fully incoperated. Pour in the oil.
6. Transfer to a mixer or knead by hand for 10 minutes.
7. Cover the bowl with a tea towel and let the dough rise overnight in the fridge.

tomato sauce:

2 tbsp tomato paste
1 shallot
3 tbsp ajvar
1 bulb garlic
1 tbsp basil, finely chopped
1 can chopped tomatoes
2 sage leaves
3 thyme sprigs
1 tsp balsamic vinegar
1 tbsp parmesan cheese
1/4 tsp nutmeg
1/2 tsp dried rosemary
Salt and pepper to taste
1/2 tsp sugar

1. In a small saucepan and some olive oil.
2. Pop in the tomato paste and let this cook out for at least 5 minutes.
3. Add in a finely diced shallot. Fry for 3-5 min.
4. Add in the rest of the ingredients.
5. Let the sauce bubble away for 30-40 min.
6. Make sure the sauce is completely cooled when you assemble the pizza.

Magic blooms only in rare souls 🌺 in celebration of the arrival of Beltane I was deeply inspired by the stunning edible flowers that grow nearby my house. The resilient dandelion and blooming lilac 🪻

Both infused in these lollipops with lime zest and lavender. Making homemade candy is one of my favorites because I always thinking of gifting these and make others happy with my creations. And these are literally filled with natural magic even though there are purely made out of sugar. We all need some sweetness in our lives from time to time.

A very special birthday cake for a very special soul 🪷
This cake is dedicated to you:

Green almond cake with lemon zest and lavender (the cake was so moist that most of the layers broke in half when I lifted it 😅)

Rhubarb and strawberry jam in the middle, infused with cardamom (a fierce spice that intented to attract wealth to the wonderful woman I made this cake for). The jam has also vanilla, lime leaves and lemon grass.

Pistachio Swiss meringue buttercream with smoked sea salt. This buttercream is silky yet cloudy and most important not too sweet.

The cake is decorated with edible flowers like yellow violets and lilacs. Saffron rock candy to resemble crystals. Perilla leaves (they are beyond beautiful on a cake and steal the show with their star anise aroma.

And if you haven’t noticed the cake is square because my soulsis is a one of a kind woman and she should have a cake than aligns with her magnificent character.

I love you SO SO much, you are my chosen family and I cannot wait to share treats with you in person and when we do it’s going to be the party of the century, we have so much to look forward to soulsis!
