1️⃣Mango Shrimp Ceviche

Ingredients:
1/2 pound cooked shrimp (peeled, deveined, and chopped into bite-size pieces)
1 ripe mango (peeled and diced
1/2 small red onion (finely chopped)
1 jalapeño (seeded and finely chopped)
1/2 avocado diced
1/4 cup fresh cilantro, chopped
1/4 cup fresh lime juice (about 2–3 limes)
Salt and pepper, to taste

Instructions:
If using raw shrimp, poach it first: boil water, add shrimp, and cook for 1–2 minutes until just pink. Cool immediately in ice water.

In a large bowl, combine the shrimp, mango, red onion, jalapeño, avocado and cilantro.

Pour lime juice over the mixture. Toss gently to combine. Add salt and pepper to taste. Cover and refrigerate for about 30 minutes to let the flavors meld.
Enjoy with tortilla chips, tostadas, or lettuce cups!

2️⃣Cowboy Caviar Dip

Ingredients:
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can black-eyed peas, drained and rinsed
1 cup corn kernels (fresh, canned, or thawed frozen)
1 red bell pepper, diced
1 small red onion, finely chopped
1–2 jalapeños, seeded and finely chopped (optional for heat)
1 cup roma tomatoes, diced
1 avocado, diced (add right before serving)
1/4 cup fresh cilantro, chopped

For the Dressing:
1/3 cup olive oil
1/4 cup red wine vinegar
1 tablespoon lime juice
1–2 teaspoons honey or sugar (to balance acidity)
1/2 teaspoon garlic powder
1/2 teaspoon cumin
Salt and pepper, to taste

Instructions:
1. Make the dressing: In a small bowl or jar, whisk together the olive oil, red wine vinegar, lime juice, honey, garlic powder, cumin, salt, and pepper.
2. Combine the dip: In a large bowl, mix together beans, black-eyed peas, corn, bell peppers, onion, jalapeño, tomatoes, and cilantro.
3. Toss with dressing: Pour dressing over the mixture and stir gently to combine.
4. Add avocado last: Just before serving, gently fold in diced avocado to keep it fresh.
5. Chill: Let it sit in the fridge for at least 30 minutes to let flavors blend

Ingredients
3 medium ripe tomatoes, diced
½ medium red onion, finely chopped

Salt, to taste (start with ½ tsp)

Instructions

Taste and adjust seasoning — add more lime, salt, or jalapeño as you like.

4 medium ripe tomatoes (Roma or plum)
1 medium white onion, halved
3 jalapeños or serrano peppers (adjust heat level)

Salt, to taste

Instructions

½ cup powdered sugar
1–2 tbsp lemon juice

Instructions:
1. Activate the Yeast: In a small bowl, mix warm milk, 1 tsp sugar, and yeast. Let sit for 5–10 minutes until foamy.
2. Make the Dough: In a large bowl, combine flour, remaining sugar, salt, lemon zest, and lemon juice. Add softened butter, cream cheese, egg, and the yeast mixture. Mix until a sticky dough forms.
3. Knead: Transfer to a floured surface and knead for 8–10 minutes (or use a mixer with a dough hook) until smooth, soft, and elastic. The dough should feel slightly tacky but not sticky.

3. Knead: Knead on a lightly floured surface (or with a mixer dough hook) for 8–10 minutes, until smooth, elastic, and slightly tacky but not sticky.
4. First Rise: Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
5. Shape the Bread: Punch down the dough, divide into equal portions (you can make a loaf, rolls, or braid it). Shape and place in a greased loaf pan or round baking dish.

Dry

1 Tbsp baking powder

Wet
2 eggs
1 cup milk
⅓ cup oil or melted butter

Cheese
1½–2 cups shredded cheddar cheese
(mild or sharp)

Optional Add-Ins
2 Tbsp chopped chives or parsley
½ tsp black pepper
pinch paprika

Instructions
1. Preheat oven
350°F (175°C). Grease a loaf pan.
2. Mix dry ingredients
Flour, baking powder, salt, garlic powder.

2–4 Tbsp milk (if batter is thick)

Instructions
1. Preheat
350°F (175°C). Grease a loaf pan
2. Mix dry
Flour, baking powder, baking soda, salt, sugar
3. Mix wet
Whisk yogurt, eggs, oil/butter
4. Combine
Stir wet into dry. Add a little milk if batter feels too thick. Do not over mix.
5. Bake
Pour into loaf pan. Bake 45–55 minutes. Toothpick should come out clean
6. Cool
Let rest 10–15 minutes before slicing

Tips
Brush top with butter after baking for a glossy finish.
Sprinkle sugar on top before baking for a light crust.
Toast slices with honey or jam — amazing!
