Celebrating St. Patrick’s Day ☘️ with pistachio cupcakes. These are delicious! I used pistachio flour from and their recipe with a modified buttercream. I sprinkled the tops with a little more pistachio flour and some chopped pistachios. The sweet and salty combination is 🤌🏼.

We celebrated 1822 style with a “Home on the Range” themed party for my daughter’s 18th and my nephew’s 22nd birthday! If you’ve been around here for a while, you know I love throwing parties with unique themes. From the cowboy art, and the homestead decor, to the pie tin plates and western-esque wine bottles, I look at every party as a creative challenge. I served smash burger & pulled pork sliders on homemade buns, cornbread muffins with honey butter, baked potatoes with all the fixin’s, an elevated version of coleslaw, kale salad with pesto ranch, a big crock of chili beans and, of course, my signature charcuterie spread on a long wooden board. Desserts included a vanilla cake with black cocoa buttercream, chocolate cupcakes with vanilla buttercream, and (as requested by my nephew) cannoli cream-filled tartlets + a bowl of the extra cannoli cream served with pizzelle, plus a variety of ice creams. 🐴 🦬 🌾🎠

Squash + White Chocolate Scones. I decided to play along with and bake some scones last week. The flavor profile of these sounded really interesting, and it is! I ended up roasting the squash instead of boiling it and it made for a slightly smoky, but sweet flavor, almost giving a corn bread flavor. These scones are delicious with a hefty slathering of honey butter. 🍯 They would be the perfect accompaniment to your Thanksgiving feast! Find the recipe at zoebakes.com.

Sweetening up the season one gingerbread cupcake at a time. 🦃 Thankful & grateful to team up with my new friend Kristy .real.happy.hours to bring you the perfect “kids’ table” treats, decor, and activities that are sure to keep the little ones happy while the adults are watching football and doing a poor job of avoiding talking politics.

Small Batch Gingerbread Cupcakes

2/3 c. flour
1/2 tsp baking powder
1/2 tsp ground ginger
1/2 tsp cinnamon
1/4 tsp ground cloves
1/8 tsp nutmeg
1/4 tsp salt
1/4 c. brown sugar
1/4 c. granulated sugar
2-1/2 Tblsp vegetable oil
1 egg
1 tsp vanilla
1/4 c. sour cream
2 Tblsp whole milk

1. Preheat oven to 350F, and line muffin tin with 6 liners
2. Combine flour, baking powder, spices and salt in small bowl.
3. In a medium bowl, whisk together sugars, vegetable oil, egg, sour cream, and vanilla until smooth.
4. With a spatula, stir in the flour mixture to the wet ingredients, adding the milk just as the dry ingredients are getting incorporated. Do not overmix.
5. Spoon batter into prepared tin, filling 1/2-2/3 full.
6. Bake 15-18 minutes or just until the tops are set and slightly spring back when you tap on the tops.

Cool completely before frosting with your favorite vanilla buttercream or cream cheese frosting.

Apple Cider Donut Cake 🍎
In honor of , I’m resharing the perfect cake for an autumn brunch or Thanksgiving dessert. It’s so easy and so delicious! 🍏

Recipe…
Butter Pecan cake mix (could also use spice or yellow cake mix)
3/4 cup apple cider
1/2 cup applesauce (I used cinnamon)
3 large eggs
1 Tblsp brown sugar
1/4 tsp cinnamon
1/4 tsp nutmeg
1 tsp vanilla

Grease a flour fluted cake pan. Preheat oven to 350. Combine all ingredients and mix just until moistened. Pour into the prepared pan and bake for 38-43 minutes or just until set (don’t over bake!)
Cool for 10 minutes in the pan, then turn out onto wire rack to continue to cool. Brush with 1/4 cup melted butter and sprinkle on a mixture of 2 tablespoons cinnamon plus a half a cup sugar. This works best if the cake is cooled, otherwise the cinnamon and sugar just dissolve into the cake.
