Poularde en Vissie Alla Fernand Point: a dish that holds very special meanings to my heart as a sucker for classic French cuisine. Originally created by Fernand Point in honor of Marius Vettard, a chef from the Lyon restaurant 'Cafe Neuf', a bresse chicken is stuffed with truffles and put in a pig bladder then gently boiled in consommรฉ with tender love and care. The bladder hermitically seal in the juices of the chicken and the result is incredibly tender and truffle infused breast. pairs this legend of a dish with a true Singapore classic in the form of chicken rice, accompanied by the legendary Escoffier's sauce Albufera. A dream come true.
