Some of the best moments happen while you're waiting for the food.

The bartender mixing cocktails, the view on Le Morne, and that quiet anticipation before the first plate arrives.

Then came a beautiful entrée, a delicious main course, and the perfect dessert to finish it all.

These are the moments I enjoy capturing, not just the food, but the atmosphere and everything in between.

Du café… de la plante à la tasse ☕🌱✨

Tout commence dans un environnement parfaitement équilibré : altitude idéale, climat adapté, sol riche et humidité contrôlée, essentiels pour permettre aux cerises de café de mûrir lentement et développer toute leur complexité aromatique.

Les cerises sont ensuite récoltées à la main, puis soigneusement triées, dépulpées, lavées et séchées afin de préserver leur qualité et leur identité. Vient ensuite la torréfaction 🔥, où la réaction de Maillard transforme le grain et libère toute la richesse des arômes.

Enfin, place à la dégustation en cupping ☕ :
• dry nose — sentir le café moulu 👃
• wet nose — découvrir les arômes après infusion 🌿
• slurping — aspirer pour analyser pleinement les saveurs, l’acidité, le corps et la finale

Une expérience sensorielle complète qui rappelle que chaque tasse est le fruit d’un travail précis, du sol jusqu’à la passion des producteurs 🌍✨
