SICHUAN PEPPER
Sichuan pepper is an aromatic, tangy, and mouth-numbing spice from China's Sichuan province.
also known as szechuan pepper, Chinese prickly ash, mala pepper.
India- Tilfda.
Commonly used in sichuan cuisine in China and in Nepal. It is made from the genus, which includes citrus & rue.
Origin: China
Grown in: Temperate climate
In India, it grows in the north Easter region, in the lower Himalayas, and some konkani states like Maharashtra and Kerala.
Culinary uses: Chinese, sichuan cusine, Nepali, Kashmiri, Tibetan cuisine.
Used as flavored spice grinded in to the powd, added during cooking or as garnish.
Flavor: Citrus like flavor includes a tingling numbness in the mouth.
Creates a flavor known as mala
How to Select: Bright red/green
