A huge thank you to HSBC LIV Golf for bringing us together for this unforgettable experience.
And a heartfelt thank you to Chef Shane and the Arcane team for inviting us and presenting such a beautiful meal.
This was our very first Michelin fine dining experience, and it taught us something simple — true elegance isn't about distance, but about heart. The focus and dedication in the kitchen, and the genuine smiles in every photo with us, were simply lovely.
Every dish had its own character —
For starters, we enjoyed the Salad of baby artichoke, anchovies, braised radicchio, preserved lemon cream and sesame chips — the saltiness of the anchovies paired beautifully with the bright preserved lemon cream, finished with a crunchy sesame chip. We also had the Salmon rillette cabbage roll, green apple, fresh peas, stracciatella and kaffir lime dressing — crisp green apple, sweet peas, creamy stracciatella, all lifted by the aromatic kaffir lime dressing.
For mains, the Roasted wagyu beef tongue with pickled daikon, grelot onions, chimichurri and sauce diable was crispy on the outside, tender inside — the pickled daikon and grelot onions brought a refreshing acidity, while the chimichurri and sauce diable added warmth and a gentle kick. We also had the Braised fremantle octopus with merguez sausage, caponata and baby gem salad — the octopus was beautifully tender, the spicy merguez sausage brought bold depth, and the sweet-sour caponata created a perfect Mediterranean harmony.
To end on the sweetest note — tasting Arcane's famous canelé. Crispy shell, soft heart, slow-spreading caramel happiness. Pure joy!
The entire menu, while elegant, carried a rare sense of ease — it reminded me of Australia's sunshine and effortless spirit. Not rushed, not tense. Just right.

呢間係我哋人生第一間米芝蓮 fine dining 餐廳,而佢教我哋嘅嘢好簡單——真正嘅精緻,唔在於距離,而在於用心。廚房入面嘅專注認真,同鏡頭前每一個真誠笑容,都係咁可愛。
嘢食當然好味,但更難忘嘅係佢哋對客人食飯節奏嘅溫柔照顧。成個 menu 雖然精緻,但入面藏住一種難得嘅自在——令我想起澳洲嘅陽光同隨性,唔急唔躁,啱啱好。
最後食到 Arcane 最出名嘅可麗露,真係太幸福了😍
