🌿🌼 Foraging in May: A Guide to Wild Herbs and Edible Plants πŸŒ±πŸƒ

As the days grow longer and nature bursts into life, May offers a bounty of wild herbs and edible plants waiting to be discovered. Here's your guide to what to look for this month:

1. Wild Garlic (Allium ursinum): Also known as ramps or ramsons, wild garlic carpets woodland floors with its distinctive aroma. Use the leaves in salads, soups, or pesto for a burst of flavor.

2. Nettles (Urtica dioica): Despite their sting, nettles are a nutritious and versatile plant. Harvest the young leaves and use them in soups, teas, or as a substitute for spinach in recipes.

3. Dandelion (Taraxacum officinale): Often seen as a w**d, dandelion is a powerhouse of nutrition. Use the leaves in salads and the roots to make a caffeine-free coffee substitute.

4. Elderflower (Sambucus nigra): Fragrant elderflowers can be gathered to make delicious cordials, syrups, and even fritters. Look for creamy white clusters in hedgerows and woodland edges.

5. Chickw**d (Stellaria media): This delicate herb is rich in vitamins and minerals. Add chickw**d to salads or sandwiches for a nutritious boost.

Remember, when foraging, always follow these guidelines:
β€’ Only harvest plants you can positively identify and are confident are safe to eat.
β€’ Respect nature and forage sustainably, taking only what you need and leaving enough for wildlife and future foragers.
β€’ Avoid foraging in areas that may be contaminated with pollutants or pesticides.

Happy foraging, and enjoy the flavours of the wild this May! 🌿🌸

So much water! The underground stream has risen in Petham and shows no sign of abating. I never get tired of the views on this circular walk through Earley Woods and across the Kent Downs.
