Make yout own Dish 👨‍🍳
Chicken Kabsa Rice Recipe (Serves 4–6)

Ingredients

* 2 cups basmati rice
* 1 whole chicken (cut into pieces) or 1 kg chicken
* 2 onions, finely chopped
* 3 tomatoes, chopped
* 3 cloves garlic, minced
* 2 carrots, grated (optional)
* 3 tbsp tomato paste
* 4 cups chicken stock or water
* 3 tbsp vegetable oil

Kabsa Spice Mix

* 1 tsp cumin powder
* 1 tsp coriander powder
* 1 tsp paprika
* ½ tsp turmeric
* ½ tsp black pepper
* ¼ tsp cinnamon
* 3 cardamom pods
* 2 cloves
* 1 bay leaf
* Salt to taste

Optional Garnish

* Raisins
* Almonds or cashews, toasted
* Fresh coriander

Method

1. Wash and soak the basmati rice for 20–30 minutes.
2. Heat oil in a large pot and fry onions until golden.
3. Add garlic and tomatoes. Cook until soft.
4. Add tomato paste and all spices. Stir for 1 minute.
5. Add chicken pieces and cook for 5–7 minutes.
6. Pour in stock or water. Cover and simmer for 25–30 minutes until chicken is cooked.
7. Remove the chicken and set aside.
8. Add the drained rice to the broth. Adjust salt if needed.
9. Cover and cook on low heat for 18–20 minutes until the rice is tender.
10. Place the chicken on top of the rice and let it rest for 5 minutes.
11. Garnish with raisins and toasted nuts before serving.
